Abstract
PURPOSE:To prepare the titled snack food capable of keeping its quality over a long period and giving characteristic delicious taste of NATTO (fermented soybean) when eaten, by using dried NATTO (or its powder) as a core and a moisture-shielding edible material as a surface part, thereby masking the characteristic smell of NATTO. CONSTITUTION:The objective novel snack food of dried NATTO is prepared either by coating dried NATTO (preferably dried by vacuum freeze-drying) or its crushed product with a moisture-shielding edible material (preferably cocoa butter) or by mixing the above two components.
