Abstract

PURPOSE: To obtain a sliced and dried rice cake-like food wihtout an offensive smell, by dissolving polysaccharide, e.g. glucomannan, in a starch, etc. at a high temperature and pressure, and releasing the high pressure.
CONSTITUTION: A powder to be a carrier, e.g. grain flour or starch, is mixed with a polysaccharide, e.g. glucomannan, and water is then added to the mixture to give a moisture content of 15W40%, preferably 20W30%. The resultant mixture is pressed in an extruder, pressurized, heated and exposed to a high temperature in a short time in pressurization to dissolve the glucomannan, etc. After the uniform mixing, the mixture is then released from a jetting outlet of the extruder to the air and expanded.
