Abstract
PURPOSE: To exhibit a sufficient preventing effect on deterioration with high safety, by adding ethanol or glycine, and glycosylsucrose or a saccharide containing β- cyclodetxrin to a processed food.
CONSTITUTION: (A) Either of ethanol or glycine and (B) either of glycosylsucrose or a saccharide containing β-cyclodextrin are added to a processed food, e.g. a noddle, daily dish, rice cake or marine fish-paste product, to prevent the deterioration thereof. The components (A) and (B) may be added to the material in any stage for preparing the processed food, for example, in mixing the processed food or by applying the components to the surface of the processed food product uniformly. The components (A) and (B) may be previously added separately, but preferably mixed with each other uniformly and then mixed with the processed food.
