Abstract

PURPOSE: To prepare preservable cooked rice, by repeating the immersion and steaming of polished rice several times, and packaging and sealing after the last immersion process.
CONSTITUTION: Polished rice is washed with water, and immersed in water at normal temperature (the 1st immersion) until the weight of the rice increases by absorbing water to about 125W130% of the initial weight. The rice is then steamed for about 7W15min (the 1st steaming), and immersed in warm water for about 2W15sec (the 2nd immersion) until the weight increases to about 150W160% of the initial weight. Thereafter, it is steamed for about 7W15min (the 2nd steaming) and immersed in warm water for about 12W15sec (the 3rd immersion) until the weight increases to about 180W190%. Finally, the 3rd steaming and the 4th immersion are carried out under the similar conditions to obtain cooked rice amounting to 210W230% in weight of the raw material. The cooked rice is put in a container and sealed.
