Abstract

PURPOSE: To prepare preservable cooked rice having uniform water content, excellent handleability in sealing, packaging, etc., and good taste of the fresh cooked rice, by immersing rice in water at room temperature, steaming the rice, immersing in hot water, steaming again, and once more immersing in hot water, followed by sealing.
CONSTITUTION: Polished rice is washed with water, and immersed in water at room temperature until the weight of the rice increases to 125W130% of the initial weight. The swollen rice is steamed at normal pressure for 10W20 minutes, and again immersed in hot water at ≥60°C until the weight increases to 160W180% of the initial weight. The rice is again steamed for 10W20 minutes, and once more immersed in hot water (containing seasonings) at ≥60°C for 20W60 seconds until the weight increases to 200W230% of the initial weight. The cooked rice is packed with a non-permeable packaging material.
