Abstract

PURPOSE: To obtain an instant dried rice capable of being reconstituted in a short time after pouring hot water thereon, by conditioning a gelatinized rice to give a moisture content of a prescribed value, and drying the conditioned rice.
CONSTITUTION: Water or a seasoning solution is added to rice at a weight ratio between the water and the rice of about 0.7W1.7 to give a moisture content of 50W 65% after the gelatinization, and the rice is gelatinized by heat. The gelatinized rice is then immersed in water for a short time to increase the moisture content thereof to about 10% or more higher than that before the gelatinization to condition the moisture. The rice is maintained at a temperature of 25W80°C for 30min or longer while keeping the moisture content at such a value as not to be beyond the range of 50W85%. Alternatively, the moisture may be conditioned by keeping the rice at a temperature of 25W80°C for 30min or longer to make the moisture content 10% or more higher than that before the gelatinization. The conditioned rice is then dried to a moisture content of 2W15% while keeping the moisture in the gelatinized rice from freezing.
