Abstract

PURPOSE: To make it possible to cook rice immediately at need, by vacuum packaging polished rice grains washed with water in a state of larger amount of moisture than in the usual one.
CONSTITUTION: Polished rice grains are washed with water in a rice washing machine 1, dehydrated dried to a moisture content (about 14.7%) higher than in the usual one (moisture: 12.4%), and enclosed in a bag 4 made of a synthetic resin sheet by a vacuum packaging apparatus 3. In cooking, the rice grains and water at a weight ratio of 1:1 are measured, immediately heated and cooked.
