Abstract
PURPOSE: After seasoned, fried bean curd is packaged with a packaging material of flexible plastic and a specific amount of air or inert gas is tightly sealed in the package, thus preventing the package from being flattened by pressure and reducing the change in quality with the passage of time.
CONSTITUTION: After seasoned "abura-age" is packaged with a flexible plastic material and air or an inert gas is tightly sealed in the package at a ratio of 10W100ml to 100g of the packaged ingredients, the resulting product is sterilized. For example, after 50 sheets of "abura-age" for "inari-zushi" (flavored boiled rice wrapped up with fried bean curd), in which each sheet has 4g of weight, are oil-extracted, they are boiled in a seasoning consisting of 200g of sugar, 150cc of soysauce, 1g of sodium glutamate and 750cc of water. The resulting seasoned 'abura-age' becomes about 10g in weight and they are packaged in a plastic film for retorting so that 10ml of space remains every sheet of the abura-age in the package. Then, the tightly sealed packages are retorted for 5min after the temperature at the center of the abura-age in the package reaches 120°C.
