Abstract

PURPOSE: To obtain a packaged rapidly cookable rice having improved flavor, free from lumping during storage and transportation, by sealing up rice immersed in water in a container,followed by heat sterilization.
CONSTITUTION: Uncooked rice, e.g. glutinous or nonglutinous rice, is immersed in water for 1W10hr to form immersed rice with a water content of about 28W38%, which is packed into a heat-resistant plastic or metallic container to form a lawer about 5cm thick or less with an air or nitrogen content of about 10W50%. The container is then sealed and sterilized under heating at 100°C or above, preferably 111°C for about 45min or 118°C for about 30min in the case of steam under pressure in a retort. In eating, the rice in the opened container is boiled with water in an amount of 50W80% of that of the rice for about 3W5min.
