Abstract

PURPOSE: To eliminate the aseptic equipment in steps for food manufacture and to rationalize the production and stock control, by heat sterilization of dried powdered food in a retort.
CONSTITUTION: Foods, e.g. fresh vegetables, are dried in a dryer, and powdered in a pulverizer, then sealed up in a container, e.g. a small-sized container, 18l can, or plastic bag, with the air remaining above. The container is sterilized in a retort by heating at 80W120°C. The change in pressure of the container and retort during heating and cooling is detected to maintain the pressure of the retort higher than that of the container by a given range (about 0.3W0.5kg/cm2, and the damage of the container is thus prevented. Handleability in sealing is improved due to the air- containing package.
