Abstract

1365043 Canning food products H J HEINZ CO 11 May 1973 [12 May 1972] 22638/73 Heading A2D A method of cooking and canning food comprises sterilizing the food by heating, charging the food into containers within a first enclosure filled, at least in the zone of charging, with saturated steam at a temperature at least equal to the temperature of the food, transferring the filled containers to a chamber filled with air at a pressure equal to that of the steam in the first enclosure, sealing the containers in this chamber and charging the sealed containers to a second enclosure. The second enclosure is filled with saturated steam at a temperature and pressure equal to that of the saturated steam in the first enclosure and the same pressure as the air in the chamber, and the containers are held in this enclosure for a period of time sufficient to replace any heat lost by the containers in the chamber, and to effect complete sterilization of the containers and any air or air-exposed product in the containers. The containers are then discharged from the second enclosure. The steam in the enclosures is preferably at a temperature within the range 270-280‹F. The air in the chamber is preferably at a temperature not exceeding 100‹F and a pressure of 30 psig. The first and second enclosures may each be in open communication with the chamber so that a thermal barrier exists between the enclosures and the chamber. A suitable apparatus is shown in plan form in Fig. 1 wherein raw food is cooked in kettle 10 and sterilizer 16 and, at about 270‹F is passed to filling station 18. Empty containers are passed via pocket valve 26 to first enclosure 24 in which is maintained a saturated steam atmosphere. The containers are advanced to the filling station and there filled with a predetermined amount of food. The filled containers are then advanced to seaming chamber 28 wherein lids supplied via lid-feeding device 30 are attached to the containers. The sealed containers are then advanced to a second enclosure 32 which is elevated above the first enclosure. After remaining in enclosure 32 for a time sufficient to achieve total sterilization, the containers are passed to coolers 36 and 40.
