Abstract
PURPOSE: To improve the migration efficiency of coloring matter and to impart excellent surface gloss to processed meat food, by packaging the food with a fibrous casing which is useful for the after-smoking of the food.
CONSTITUTION: The thick outer layer (cellulose) of a fibrous casing 4 is dyed with a brown dye (skin of kaoliang, cacao, shell of cacao, cyanut, skin of chestnut, skin of persimon, seed of persimmon, skin of peanut, etc.), and the dye is insolubilized with an acid. The casing 4 is turned inside out with a device 5, filled with raw meat, and heated.
