Abstract
PURPOSE: Eggs are placed in containers and the containers are circulated so that eggs are continuously heated and cooled, whereby a number of raw eggs are steamed or boiled continuously.
CONSTITUTION: Raw eggs (e) are placed in vessels 11 in the egg container 1 in a plurality of rows. At the same time, eggs roll down with their own weight in the position where the endless chain (c) is inclined at an angle, then come through the inlet 2b of the heating tank 2 into steam or hot water. Simultaneously, the eggs with the top exceeding the vessel 11 slightly are brought into contact with the top stationary part 4 and rolled as the vessels are circulated in zigzag movement to effect steaming or boiling. The vessels go down from the outlet 2c, then the vessels are turned down with the guide 17 and the eggs (e) are made to fall to the egg container 12 in the cooling tank 3.
