Abstract

PURPOSE: A process for the alcoholic fermentation of syrup made from starch, characterized in that the syrup is filtered to remove the cellulosic material and other solid contents, and the yeast is separated and recovered from the unrefined product after fermentation and used repeatedly for the fermentation.
CONSTITUTION: Starch is saccharified with a carbohydrase by conventional process to obtain syrup composed mainly of glucose, and lfiltered to separate and recover the cellulosic material and other solid contents. The cake is mixed with the alcohol distillation waste liquid discharged from the alcohol production process, subjected to the methane fermentation, and used as a part of the heat source of the alcohol production process. The filtrate is fermented with alcoholic fermentation yeast by conventional process. After fermentation, the unrefined product is separated into the light liquid and the heavy liquid by a centrifugal separator. The light liquid is distilled to obtain pure alcohol, and the heavy liquid containing the yeast is used repeatedly as the yeast for the alcoholic fermentation.
