Abstract
PURPOSE: A process for the alcoholic fermentation of syrup obtained by the acid sacchrification of starch, characterized in that a part of the saccharified syrup is mixed with the yeast recovered from the unrefined fermentation product, and the yeast is used repeatedly for the fermentation.
CONSTITUTION: A starchy raw material is subjected to the acid sacchrification with sulfuric acid, and a major part of the produced syrup is neutralized with calcium carbonate, filtered, and fermented by conventional process in the presence of alcoholic fermentation yeast. After fermentation, the unrefined product is separated into the light liquid and the heavy liquid by a centrifugal separator. The light liquid is distilled to obtain pure alcohol, and the pH of the heavy liquid containing the yeast is adjusted to 1W4 by mixing the liquid obtained by filtering the remaining part of the above acid-containing surup separated from the acid-sacchrification product before neutralization. The mixture is maintained to the state for several hours, and used repeately as the yeast for alcoholic fermentation.
