Abstract
PURPOSE: To carry out the alcoholic fermentation at a high fermentation yield without boiling, by using pulverized corn grains or milos as a principal raw material and a glucoamylase agent derived from the genus Rhizopus.
CONSTITUTION: A raw material containing 50% or more pulverized corn grains or milos in which 30% or more particles have at least a particle size ≤840μ is mixed with water or a mixture of water with a distrillation waste liquor in an amount of 3.4W1.8 times that of the pulverized corn grains or milos to form a suspension, which is without heating mixed with a glucoamylase agent derived from the genus Rhizopus in an amount of 0.3W8.4 units based on one g dry raw material, a yeast culture cultivated by the conventional method in a volume of 5W10% based on the suspension and if necessary sulfuric anhydride up to 320ppm. The resultant mixture is then saccharified and fermented at 25W32°C.
