Abstract

PURPOSE: A process for producing alcohol by the alcoholic fermentation of syrup obtained by saccharifying starch, characterized in that the yeast is separated and recovered from the unrefined product after fermentation, and reused after the activation treatment with an acid.
CONSTITUTION: Starch is saccharified with a carbohydrase by conventional process to obtain syrup composed mainly of glucose, and fermented in the presence of an alcoholic fermentation yeast by conventional process. After the fermentation, the crude product is separated into the light liquid and the heavy liquid by a centrifugal separator. The light liquid which is the unrefined product containing alcohol is distilled to obtain pure alcohol. On the other hand, the heavy liquid containing the yeast is adjusted to about 1W4pH with an acid such as sylfuric acid, hydrochloric acid, etc., and maintained to the state for several hours. By this treatment, the dextrin coating film covering the cell wall of the yeast is dissolved and removed to afford activated yeast, which is reused as the yeast for the alcoholic fermentation of syrup.
