Abstract

PURPOSE: To improve thermal efficiency of an oven and also to obtain a scorch as desired by a method wherein a high temperature combustion gas from a burner is led into an annular pipe provided in a heating space, and the combustion gas is released partly through an exhaust nozzle formed on a side wall of the annular pipe.
CONSTITUTION: From actuating gas burners 9, 11 attached to annular pipes 5, 6 provided on the top of a heating space 3, a combustion gas from the gas burners 9, 11 circulate in the annular pipes 5, 6, and thus the annular pipes 5, 6 are heated. A material to cook in the heating space 3 is heated by a radiation heat of the annular pipes 5, 6. Then in this case, the combustion gas in the annular pipes 5, 6 is partly released into the heating space 3 through each exhaust nozzle 10, and the material to cook in the heating space 3 is heated by a convection heat. The combustion gas from the annular pipes 5, 6 is sucked through an air space 14 by actuation of a fan 16 and jetted into the heating space 3 through ducts 20, 21 provided adjacently to left and right side walls by way of ducts 17W19
