- 【特許請求の範囲】 1.水素添加された脂肪を含まない食用可能な植物性脂肪組成物であって、 −15乃至45%のステアリン酸残基含量、 −15%未満のパルミチン酸残基含量、及び −45乃至85%の不飽和C18脂肪酸残基含量を有し、 −16以上の炭素原子の鎖長を有する脂肪酸残基の合計量は、少なくとも9 5%より多く、 −(HOH+HHO)の(HLH+HHL)トリグリセリドに対する比は、 1.0未満であり、 脂肪組成物のトリグリセリドの2位に結合している、5乃至45%の脂肪酸 残基は飽和しており、95乃至55%は飽和していないことを特徴とする、食用 植物性脂肪組成物。 2.分別された脂肪を含まない、請求項1の脂肪組成物。 3.脂肪組成物を構成する脂肪の少なくとも一部が、トリグリセリドの3つの全 ての位置を含むエステル交換に付されている、請求項1又は2の脂肪組成物。 4.10乃至100%、好ましくは15乃至90%、特に20乃至70%の、脂 肪組成物を構成する脂肪がエステル交換に付されている、請求項3の脂肪組成物 。 5.脂肪組成物を構成する脂肪が、大豆油、亜麻仁油、菜種油、ヒマワリ油、コ ーン油、綿実油、米糠油、及びこれらの2つ以上の油の混合物のような、高ステ アリン酸残基を含有する種類に由来する、請求項1乃至4のいずれか1請求項の 脂肪組成物。 6.脂肪組成物を構成する脂肪が、一つの種類の植物に由来する、請求項1乃至 5のいずれか1請求項の脂肪組成物。 7.脂肪組成物のグリセリドの2位が、5乃至40%、好ましくは7乃至35% 、より好ましくは10乃至30%の飽和脂肪酸残基を含む、請求項1乃至6のい ずれか1請求項の脂肪組成物。 8.0乃至12%、好ましくは0乃至10%、より好ましくは1乃至8%のパル ミチン酸残基含量を有する、請求項1乃至7のいずれか1請求項の脂肪組成物。 9.15乃至35%、好ましくは18乃至30%のステアリン酸含量を有する、 請求項1乃至8の脂肪組成物。 10.50乃至85%、好ましくは55乃至80%、より好ましくは60乃至75 %の不飽和C18酸残基含量を有する、請求項1乃至9の脂肪組成物。 11.少なくとも15%、好ましくは15乃至80%、より好ましくは20乃至5 0%の不飽和C18酸残基が多不飽和脂肪酸残基である、請求項1乃至10のい ずれか1請求項の脂肪組成物。 12.(HOH+HHO)の(HLH+HHL)に対するトリグリセリドの比が、 0.85未満である、請求項1乃至11のいずれか1請求項の脂肪組成物。 13.水素添加された脂肪を含まない、請求項1乃至12のいずれか1請求項の食 用植物性脂肪組成物を製造する方法であって、以下の工程、すなわち、 A.少なくとも15%のステアリン酸残基含量、少なくとも15%のパルミチ ン酸残基含量、及び少なくとも30%の不飽和C18酸残基含量を有する水素添 加されていない植物性脂肪を、グリセリドの3つの全ての位置を含むエステル交 換に付し、エステル交換された脂肪を得、及び、 B.任意に10乃至100%のエステル交換された脂肪を90%までの水素添 加に付されていない植物性脂肪とブレンドする、 工程を含み、得られる脂肪組成物は、 −15乃至45%のステアリン酸残基含量、 −15%未満のパルミチン酸残基含量、及び −45乃至85%の不飽和C18脂肪酸残基含量を有し、 −16以上の炭素原子の鎖長を有する脂肪酸残基の合計量は、少なくとも9 5%であり、 −(HOH+HHO)の(HLH+HHL)に対するトリグリセリドの比は 、1.0未満であり、 −トリグリセリドの2位に、5乃至45%の飽和脂肪酸残基、及び95乃至 55%の不飽和脂肪酸残基を有する、 食用植物性脂肪組成物の製造方法。 14.エステル交換が、脂肪が実質的に十分に液状である温度において実施される 、請求項13の方法。 15.エステル交換が、ランダムエステル交換である、請求項13又は14の方法 。 16.エステル交換が、1,3−特異的酵素を使用し、以下の工程、すなわち、 A1 十分な水の存在の下、脂肪を酵素的なエステル交換に付して、部分的な グリセリドを形成し、アシルの転位を生じ、 A2 部分的なグリセリドを再エステル化し、エステル交換された脂肪を得る 、 という工程を含み、成し遂げられる、請求項13又は14の方法。 17.請求項1乃至12のいずれか1請求項の脂肪組成物を有する脂肪相を含む、 可塑的な食用脂肪製品。
