Description

【発明の詳細な説明】 本発明は焙煎粉砕コーヒー又は飲料製造用の任意の他の
アロマ物質を含有する密閉カートリツジの抽出方法に関
する。
１カツプのコーヒーに対し正しい量の焙煎粉砕コーヒー
を含有する密閉カートリツジからすぐれたエスプレツソ
コーヒーを調製するために、カートリツジの抽出中ある
條件が満たされねばならない。本発明に関連した、カー
トリツジは特にCH-PC 605293号明細書記載のカートリツ
ジであると理解される。本発明方法はカートリツジの有
効な抽出を得るために守られねばならない特別の條件を
特定する。
本発明は次の工程： ａ）予備湿潤水量を上部からカートリツジに導入し、 ｂ）空気を注入して粉砕コーヒー又はアロマ物質に通気
し、 ｃ）水をカートリツジの実際の抽出に対し導入し、飲料
は下部からカートリツジから回収する、 を含むカートリツジの抽出方法に関する。
粉砕コーヒーが使用される場合、エスプレツソコーヒー
は本発明に従つて調製できる。
本発明に関連して、アロマ物質は抽出できる任意の物
質、すなわち茶およびメントール、クマツヅラ、カミツ
レ、ウイキヨウなどを含むアロマ性植物のような他の同
様の物質でよい。
使用カートリツジは予備湿潤水および抽出水、および通
気に使用する空気の導入に対し上部から穴をあける。こ
の下部部分には、通気段階中開く弱くしたラインを組み
こんだ膜を含み、こうしてエスプレツソコーヒー又は調
製飲料を流出させることができる。
予備湿潤段階で水をカートリツジに入れ、コーヒーを膨
潤させる。この水はゆるく充填した粉砕コーヒー全体に
ゆつくり広がり、その流れは尚完全な膜により阻止され
る。粉砕コーヒーの各粒子は何の制限もなく膨脹し、自
由に容積を増大させる。こうして粉砕コーヒーは一様に
吸水し、さらにすべての揮発性アロマは膜が開く前に予
備湿潤水により吸収される。予備湿潤段階の時間は２〜
４秒である。
通気段階は良質のエスプレツソコーヒーを得るには必須
である。
正確に吸水した粉砕コーヒーは利用できる全容積を占
め、空気の通過に抵抗を与える。空気の摩擦係数は水の
ものより非常に低いので、空気は急速に粉砕コーヒーを
通り、特に容積全体に一様に拡散する。空気により開放
された通路は抽出水に対し非常に多数の灌注水路である
抽出水による加圧下で空気容積はカートリツジ内に圧縮
され、粉砕により自由に残されたすべてすき間に浸透
し、粉砕コーヒー粒の表面の空所にさえ入る。空気の圧
力がその破壊抵抗より大きい力をカートリツジ膜に適用
する場合、弱くしたラインに沿つて裂け、空気容積の部
分は急激に外側に膨脹し、その時にカートリツジ内の圧
力が減少する。通気段階は約１秒続行する。
最終段階では、抽出水は最初にごく低圧下の潅注水路を
通過する。その後、粒子上の水の摩擦力はコーヒーを圧
縮し、抽出圧は指数的に増大する。この圧は圧縮力が水
に随伴する空気の膨脹により生ずる灌注水路の膨脹力に
よりバランスされる場合増加を停止する。こうして抽出
は一定圧で続き、水はすべてのコーヒー粒を最適條件下
で抽出する。この最終段階の時間は20秒より短かい。こ
うして得たエスプレツソコーヒーはクリーム状で、空気
−コーヒー混合物による黄金色の泡およびコーヒーに溶
解した空気フラクシヨンを有する。
本発明によれば予備湿潤および通気工程は付随して、又
は交互に行なうことができる。通気および抽出工程にも
同じことが適用できる。
カートリツジ内の圧力はこれらの上記段階中変化する：
予備湿潤に対する水圧は２〜３kg/cm2、通気に対する空
気圧は３〜６kg/cm2および抽出に対する水圧は８〜13kg
/cm2である。
本発明方法は密閉カートリツジ内に予備湿潤を通して完
全のまま残る焙煎により生成したすべてのアロマおよび
コーヒーに捕捉された空気のかなりの容積を有する高品
質のエスプレツソコーヒーをより短時間に抽出できる。

Claims (6)

    【特許請求の範囲】
  1. 【請求項１】密封カートリッジ内の焙煎粉砕コーヒー又
    は飲料製造用の他の任意のアロマ物質の抽出方法におい
    て、次の工程： ａ）予備湿潤水量を上部からカートリッジに導入し、 ｂ）空気を注入して粉砕コーヒー又はアロマ物質に通気
    し、 ｃ）水をカートリッジの実際の抽出に対し導入し、飲料
    は下部からカートリッジから回収することを特徴とす
    る、上記方法。
  2. 【請求項２】エスプレッソコーヒーを調製するために使
    用する、特許請求の範囲第１項記載の方法。
  3. 【請求項３】予備湿潤および通気工程は付随して、又は
    交互に行なう、特許請求の範囲第１項又は第２項記載の
    方法。
  4. 【請求項４】通気および抽出工程は付随して又は交互に
    行なう、特許請求の範囲第１項から第３項のいずれか１
    項に記載の方法。
  5. 【請求項５】予備湿潤工程は２〜４秒、通気工程は約１
    秒および抽出工程は20秒より短かい時間続ける、特許請
    求の範囲第１項または２項記載の方法。
  6. 【請求項６】カートリッジの下部からの開口は通気工程
    中行なう、特許請求の範囲第１項から第６項のいずれか
    １項に記載の方法。
