Description
Claims (7)
- 1.焼かれそして粉砕されたコーヒーの抽出器内における抽出方法であってa) コーヒーは、20〜100℃の温度において水の添加によって湿潤されて水分含 量20〜50重量%を獲得し、 b)湿潤されたコーヒーは横長の抽出器に移送されて実質的に抽出器を満たし、 c)気体と水蒸気は抽出器から排気されて、600ミリバールと工程a)による 混合の結果としてコーヒーが獲得した温度における水素気圧に相当する値との間 の圧力を獲得し、 d)気体と水蒸気を更に排気することなく、熱い水性抽出液が排気された抽出器 の一方の端から導入されて抽出器を満たし、そして抽出が100℃より高い温度 において実行され、そして e)揮発性成分及び非揮発性成分を含む水性抽出物が抽出器の他の端から除去さ れる ことを特徴とし、 コーヒーが抽出器に移送される前に予備湿潤されている前記方法。
- 2.工程a)による湿潤のために50〜100℃の温度を有する水が使用される ことを特徴とする請求の範囲第1項に記載の方法。
- 3.工程c)による抽出器の排気の際に、圧力が、工程a)による混合の結果と して湿潤されたコーヒーが得た温度における水蒸気圧に相当する値に直ちに減じ られることを特徴とする請求の範囲第1又は2項に記載の方法。
- 4.工程a)による湿潤に先立って焼かれそして粉砕されたコーヒーが篩分けさ れて粗い部分と細い部分とに分割され、そして粗い部分はコーヒー量の1〜10 重量%を成し、一方細い部分は残部を成し、2つの部分は別々に湿潤されそして 工程b)によって粗い部分が、抽出器の端であって抽出物がそこから除去される 端に置かれるような方法で導入される ことを特徴とする請求の範囲第1、2又は3項に記載の方法。
- 5.篩分けがメッシュ大きさ2〜4mmの篩によってなされることを特徴とする 請求の範囲第4項に記載の方法。
- 6.抽出器に供給される抽出液の量を制御することによって、抽出器を通過する 液体の量及び抽出器を通る流路に垂直な断面の面積を基準としコーヒーの存在を 考慮せずに計算して、20〜50m/時間の液体流れで抽出を実行することを特 徴とする請求の範囲第1、2、3、4又は5項に記載の方法。
- 7.水が160〜190℃の温度で供給され、そしてコーヒーは1〜2.5時間 の抽出時間でコーヒーの固体物質の45〜60重量%が抽出された後に抽出器か ら除去されることを特徴とし、 抽出器が数個の抽出器の組の部分であり、最も長い時間抽出されるコーヒーを含 む抽出器に加圧下に熱水が導入され、一方湿潤されたコーヒーで満たされる最後 の抽出器から最終抽出物が回収されるようなそれ自体公知の方法で数個の抽出器 が連続して連結されている、 請求の範囲第1、2、3、4、5又は6項に記載の方法。
