Abstract
Para producir un extracto de café, café tostado y molido es humectado con agua tibia o caliente, y en un extractor se somete a un vacío para remover los gases presentes en las partículas de café y el aire intersticial. Se succiona el líquido de extracción caliente hacia el extractor utilizando el vacío. Con ello, se evita expulsar los componentes de sabor deseados por la introducción del líquido de extracción caliente, y también se evita la formación de espuma, la cual espuma de otra forma habría perturbado el flujo en el extractor.
