Abstract
An extract of coffee is made by passing chloroform vapour through roasted and ground coffee beans kept at a temperature of 90 DEG C. The vapour takes up flavouring substances and is condensed and mixed with cocoa fat. The remaining coffee is extracted countercurrently with water at about 110 DEG C. This extract is cooled and mixed in an emulsifier with the condensate. The emulsion is passed through a homogenizer which reduces the particle size to below 10m . The emulsion is spray dried. It is also stated that the flavouring substance may be transferred to hardened peanut oil or cocoa fat before it is dissolved in chloroform, that the flavour extraction may be direct from the ground and roasted beans, or from the roaster vapours, or via nitrogen passed either through the roaster or over ground and roasted beans. It is also stated that the general principle can be applied to the production of fruit-flavoured sugars.
