Abstract
A process for preparing coffee extract powder by subjecting ground roasted coffee to a steaming process with condensation of the distillate, extracting the steamed product, drying the extract, and enriching the dried product with condensed steam distillate, is characterized in that the steamed coffee is extracted, if so desired together with at most an equal quantity of unsteamed coffee, the condensed steam distillate is freeze dried together with a portion of said extract, said portion being either concentrated or non-concentrated, and the remainder of the extract is dried in a conventional manner, thereafter the dried fractions are admixed.
