ルテインは、β,ε-カロテン-3,3’-ジオールと呼ばれる、カロテノイドの一種である。本発明においてルテインは、特に断りのない限り、遊離体(フリー体)のルテインだけでなく、脂肪酸エステルなどのエステル体のルテインも含むものとする。好ましくは、ルテインは遊離体のルテインである。
サポニンは、植物に存在する、ステロイドやトリテルペンに糖が結合した発泡性の配糖体であり、例えば、起源に基づいて分類すると、キラヤサポニン、ユッカサポニン、大豆サポニン、ニンジンサポニン等が挙げられる。本発明においてサポニンは、植物体から粗精製されたものを使用しても、精製されたものを使用してもよい。本発明においては、例えば、キラヤ抽出物およびユッカフォーム抽出物を、それぞれ、キラヤサポニンおよびユッカサポニンとして使用することができる。
本発明においては、本発明の組成物を粉末の形態で提供するために、1種または2種以上の賦形剤を使用することができる。本発明に使用できる賦形剤は、食品等において許容される賦形剤であればいずれのものを使用することができ、例えば、澱粉、化工澱粉、糖類、セルロースが挙げられる。このうち澱粉としては、トウモロコシ澱粉、コムギ澱粉、バレイショ澱粉が挙げられ、化工澱粉としては、デキストリン、マルトデキストリン、粉あめ、可溶化澱粉が挙げられる。また、糖類としては、単糖および二糖(例えば、乳糖、キシロース、)に加えて、糖アルコール(例えば、キシリトール、マルチトール、イノシトール)が挙げられる。本発明においては、好ましくは、デキストリンおよび/またはマルトデキストリンを賦形剤として使用することができる。
本発明においては、本発明の組成物を粉末の形態で提供するために、1種または2種以上の増粘剤を使用することができる。本発明に使用できる増粘剤は、食品等において許容される増粘剤であればいずれのものを使用することができ、例えば、アラビアガム、アラビノガラクタン、アルギン酸、ウェランガム、エレミ樹脂、サバクヨモギシードガム、カードラン、カシアガム、カゼインナトリウム、カラギナン、カラヤガム、カロブビーンガム、キサンタンガム、キチン、キトサン、グァーガム、グルコサミン、サイリウムシードガム、ジェランガム、タマリンドガム、トロロアオイ、トラガニトガム、納豆菌ガム、ファーセレラン、プルラン、ペクチン、マクロホモプシスガム、メチルセルロース、フクロノリ抽出物が挙げられる。本発明においては、好ましくは、アラビアガムを増粘剤として使用することができる。
本発明においては、本発明の組成物に含まれるルテインの酸化や分解を抑制するために、1種または2種以上の酸化防止剤を使用することができる。本発明に使用できる酸化防止剤は、食品等において許容される酸化防止剤であればいずれのものを使用することができ、例えば、アスコルビン酸並びにそのエステルおよび塩、亜硫酸ナトリウム、エチレンジアミン四酢酸カルシウム2ナトリウム、エチレンジアミン四酢酸2ナトリウム、L-システイン塩酸塩、ジブチルヒドロキシトルエン、d-α-トコフェロール酢酸エステル、d-トコフェロール類、トコトリエノール、ミックストコフェロール、カテキン、クエルセチン、ルチン、フェルラ酸、没食子酸、コメヌカ油抽出物、セージ抽出物、生コーヒー豆抽出物、ヒマワリ種子抽出物、ブドウ種子抽出物、ゴマ油不けん化物、チャ抽出物、プロポリス抽出物、ヤマモモ抽出物、ヘゴ・イチョウ抽出物、エンジュ抽出物が挙げられる。このうちアスコルビン酸並びにそのエステルおよび塩としては、L-アスコルビン酸、L-アスコルビン酸エステル、L-アスコルビン酸ナトリウム、L-アスコルビン酸パルミチン酸エステルが挙げられる。本発明においては、好ましくは、アスコルビン酸および/またはその塩を酸化防止剤として使用することができる。
表1の配合量に従ってキラヤサポニンを配合したルテイン含有粉末状組成物を製造した。すなわち、500mLの水にキラヤサポニンを溶解し、65℃に加温した後、ルテインを添加して混合した。混合液にデキストリンとアラビアガムを添加して溶解させた。溶解後、高圧ホモジナイザー(三丸機械工業社製、500kg/cm2、3回繰り返し)を用いて乳化した。乳化後、噴霧乾燥器(ミニスプレードライアーGB22、ヤマト科学社製)を用いてキラヤサポニンを配合したルテインの乾燥粉末を調製した。
表4の配合量に従って酸化防止剤を配合したルテイン含有粉末状組成物を製造した。すなわち、500mLの水にキラヤサポニンを溶解し、65℃に加温した後、ルテインを添加して混合した。混合液にアスコルビン酸ナトリウム、デキストリンおよびアラビアガムを添加して溶解させた。溶解後、高圧ホモジナイザー(三丸機械工業社製、500kg/cm2、3回繰り返し)を用いて乳化した。乳化後、噴霧乾燥器(ミニスプレードライアーGB22、ヤマト科学社製)を用いて酸化防止剤を配合したルテインの乾燥粉末を調製した。
表6の配合量に従ってユッカサポニンを配合したルテイン含有粉末状組成物を製造した。すなわち、1000mLの水にユッカサポニンを溶解し、65℃に加温した後、ルテインを添加して混合した。混合液にデキストリンとアラビアガムを添加して溶解させた。試験区10はさらにアスコルビン酸ナトリウムを添加して溶解させた。溶解後、高圧ホモジナイザー(三丸機械工業社製、500kg/cm2、3回繰り返し)を用いて乳化した。乳化後、噴霧乾燥器(ミニスプレードライアーGB22、ヤマト科学社製)を用いてユッカサポニンを配合したルテインの乾燥粉末を調製した。
Claims (5)
- (A)ルテインと、(B)キラヤサポニンおよび/またはユッカサポニンと、(E)アスコルビン酸並びにそのエステルおよび塩から選択される1種または2種以上の酸化防止剤とを含んでなる、水に分散可能な粉末状組成物であって、(A)ルテインの含有量が5~35質量%であり、(A)ルテインに対する(B)キラヤサポニンおよび/またはユッカサポニンの配合比率(固形分質量基準)が0.10以上1.25以下であり、かつ、(E)酸化防止剤の含有量が2~25質量%である、前記組成物。
- (C)賦形剤および/または(D)増粘剤をさらに含んでなる、請求項1に記載の組成物。
- 請求項1または2に記載の組成物が配合されてなる、食品。
- 飲料の形態である、請求項3に記載の食品。
- (A)ルテインと、(B)キラヤサポニンおよび/またはユッカサポニンと、(E)アスコルビン酸並びにそのエステルおよび塩から選択される1種または2種以上の酸化防止剤とを水中で均質化処理して乳化組成物を得る工程と、前記組成物を乾燥させる工程とを含んでなる、請求項1または2に記載の組成物の製造方法であって、組成物全体に対する(A)ルテインの配合量が5~35質量%であり、(A)ルテインに対する(B)キラヤサポニンおよび/またはユッカサポニンの配合比率(固形分質量基準)が0.10以上1.25以下であり、かつ、組成物全体に対する(E)酸化防止剤の配合量が2~25質量%である、前記製造方法。
