Description
本実施形態に係るレモン果汁の製造方法は、メジアン径を25μm以上180μm以下の範囲に調整した水不溶性固形分をレモン果汁に添加する工程を含む。本実施形態に係るレモン果汁の製造方法は、上記工程を含むことにより、レモン果汁において経時的に水不溶性固形分の沈殿が形成し難く、かつ褐変が抑制され、外観が良好なレモン果汁とすることができる。
本実施形態に係るレモン果汁含有飲食品は、水不溶性固形分のメジアン径が25μm以上180μm以下であるレモン果汁、水不溶性固形分の平均粒径が21μm以上140μm以下であるレモン果汁、又は水不溶性固形分の10%径が3.6μm以上300μm以下であるレモン果汁を含む。
本実施形態に係るレモン果汁は、レモン果汁中において経時的に水不溶性固形分の沈殿が形成し難く、水不溶性固形分の分散性が向上しているという効果を奏する。したがって、本発明の一実施形態として、水不溶性固形分のメジアン径を25μm以上180μm以下とすることを含む、レモン果汁中の水不溶性固形分の分散性を向上させる方法が提供される。
(試験番号1−1)
水不溶性固形分の含有量が5%(体積/体積)になるように、レモンパルプセル(市販品)を透明レモン果汁(市販品)に添加した。
(試験番号1−2〜1−8)
レモンパルプセル(市販品)をイオン交換水で30倍(重量/体積)に希釈した後、高圧ホモジナイザー(HV−OA1−1.5S(株式会社イズミフードマシナリ製))で5MPa〜23MPaの範囲で1回〜30回処理を行い、水不溶性固形分の粒子径の異なるサンプルを調製した。不溶性固形分の含有量が5%(体積/体積)になるように、前記で得られたサンプルを透明レモン果汁(市販品)に添加した。
嵩の高さは、図2に示すように、試験管底部から液面までの高さ(A)、及び試験管底部から上澄み部分と不溶性固形成分の存在が目視で確認できる部分との境界線までの高さ(B)を測定し、Aに対するBの割合(0%〜100%で表記)として算出した。すなわち、嵩が高いほど、沈殿が形成し難く、分散性が優れているといえる。
また、レーザ回折式粒度分布測定装置(SALD−2200(株式会社島津製作所製))を用いて、水不溶性固形分のメジアン径、平均粒径及び10%径を測定した。
結果を表1に示す。また、45℃で2週間静置後の試験番号2−1〜2−5のレモン果汁の外観を撮影した写真、及びそれらの模式図を図1に示す。
(試験番号2−1)
水不溶性固形分を含むレモン果汁含有飲食品(商品名:プルコ レモン プロフェッショナル(マリー・ブリザール社製)、濃縮還元した100%レモン果汁を使用)(10mL)を、0.1mL単位で目盛りが付された試験管に注ぎ、蓋をして、90℃で30分間加熱殺菌した。ボルテックスミキサーで試験管中のレモン果汁を均一に分散させた後、45℃で2週間静置し、試験例1と同様の方法で水不溶性固形分の嵩の高さを測定した。
また、試験例1と同様の方法で、水不溶性固形分のメジアン径、平均粒径及び10%径を測定した。
結果を表2に示す。
Claims (3)
- 水不溶性固形分を含む100%レモン果汁であって、水不溶性固形分のメジアン径が25μm以上180μm以下である、100%レモン果汁(ただし、レモンの内果皮を含む摩砕物を含有する100%レモン果汁を除く)。
- 水不溶性固形分を含む100%レモン果汁であって、水不溶性固形分の平均粒径が21μm以上140μm以下である、100%レモン果汁(ただし、レモンの内果皮を含む摩砕物を含有する100%レモン果汁を除く)。
- 水不溶性固形分の10%径が3.6μm以上300μm以下である、請求項1又は2に記載の100%レモン果汁。
