Description
(1)自然光および/または人工光を受け得る環境下において、紫外線のみを遮断(遮光)することを特徴とする、1,4−ジヒドロキシ−2−ナフトエ酸(DHNA)および/またはビタミン類の安定化方法。
(2)紫外線の遮断機能を有する無色透明の容器若しくは包装体および/またはフィルムによって遮断(遮光)することを特徴とする、前記(1)に記載の方法。
(3)紫外線の遮断機能を有する照明によって遮断(遮光)することを特徴とする、前記(1)または(2)に記載の方法。
(4)1,4−ジヒドロキシ−2−ナフトエ酸(DHNA)および/またはビタミン類が飲食品に含まれている(配合されている)ことを特徴とする、前記(1)〜(3)のいずれか1に記載の方法。
(5)紫外線の遮断機能を有する無色透明の容器若しくは包装体および/または紫外線の遮断機能を有する無色透明のフィルムによって覆われた容器若しくは包装体に充填する工程を含むことを特徴とする、飲食品の製造方法。
(6)紫外線の遮断機能を有する無色透明の容器若しくは包装体および/または紫外線の遮断機能を有する無色透明のフィルムによって覆われた容器若しくは包装体に充填されたことを特徴とする、飲食品。
(7)自然光および/または人工光を受け得る環境下における、1,4−ジヒドロキシ−2−ナフトエ酸および/またはビタミン類の安定化のための、紫外線の遮断機能を有する無色透明の容器若しくは包装体および/またはフィルムの使用。
(8)1,4−ジヒドロキシ−2−ナフトエ酸および/またはビタミン類の安定化のための、紫外線の遮断機能を有する照明の使用。
(9)1,4−ジヒドロキシ−2−ナフトエ酸および/またはビタミン類が飲食品に含まれていることを特徴とする、前記(7)または(8)に記載の使用。
乳酸菌飲料を表1の配合で調製(製造)し、この乳酸菌飲料について、光安定性に関する保存試験を行った。なお、この保存試験で設定した保存条件は後述する。
光安定性に関する保存試験では、その開始時(0日)を初期値として、DHNAの濃度(含量)を測定した後に、以下の3通りの保存条件を設定した。このとき、乳酸菌飲料を1本(180mL)ずつに充填して保管し、それぞれの乳酸菌飲料(各試料)について、21日後、27日後に、DHNAの濃度を測定した。なお、DHNAの濃度はHPLC法により測定し、乳酸菌飲料の1本(180mL)あたりのDHNAの濃度を算出した。
試験試料(乳酸菌飲料)の4mLをプラスチック製のチューブ(15mL容)に採り、ここに0.1(w/v)%・アスコルビン酸−90(v/v)%・メタノール溶液を8mLで加えて攪拌混合した。このプラスチック製のチューブを遠心分離[日立工業(株)製、機種名「日立小型冷却遠心機CF7D2」、室温(約20℃]、3000rpm、5分間、1870×G)した後に、この上清を別のプラスチック製のチューブ(15mL容)に移し、ここに0.1(w/v)%・アスコルビン酸溶液を4mLで加えて攪拌混合した。
検出波長:UV254nm
カラム:CAPCELL PAK C18 MGII(2.0×100mm、3μm)、(株)資生堂製
カラムの温度:45℃
移動相:メタノール、水および酢酸の混液(50:49:1)に、ジチオスレイトールを50mg/Lの濃度になるように添加して溶解させた溶液
流速:0.2mL/分
試料溶液の注入量:5μL
HPLCの装置:アジレント・テクノロジー社製 1200シリーズ
試験試料(乳酸菌飲料)におけるDHNAの濃度(単位:μg/180mL)の測定結果を表2に示す。
乳酸菌飲料((株)明治製、商品名:「明治ブルガリア 活力すっきり のむヨーグルト」)に、プロピオン酸菌の乳清培養物の上清を0.6質量%になるように配合して、試験試料(乳酸菌飲料)を調製し、この乳酸菌飲料について、光安定性に関する保存試験を行った。なお、この保存試験で設定した保存条件は後述する。また、乳清培養物の上清におけるDHNAの濃度は、8.66μg/mLであった。
光安定性に関する保存試験では、その開始時(0日)を初期値として、DHNAの濃度(含量)を測定した後に、以下の4通りの保存条件を設定した。このとき、乳酸菌飲料を1本(180mL)ずつに充填して保管し、それぞれの乳酸菌飲料(各試料)について、7日後、14日後、21日後、27日後に、DHNAの濃度を測定した。なお、DHNAの濃度は、試験例1と同様に、HPLC法により測定し、乳酸菌飲料の1本(180mL)あたりのDHNAの濃度を算出した。
試験試料(乳酸菌飲料)におけるDHNAの濃度(単位:μg/180mL)の測定結果を表3に示す。
Claims (6)
- 自然光および/または人工光を受け得る環境下において、紫外線のみを遮断することを特徴とする、1,4−ジヒドロキシ−2−ナフトエ酸の安定化方法。
- 紫外線の遮断機能を有する無色透明の容器若しくは包装体および/またはフィルムによって遮断(遮光)することを特徴とする、請求項1に記載の方法。
- 紫外線の遮断機能を有する照明によって遮断(遮光)することを特徴とする、請求項1または2に記載の方法。
- 1,4−ジヒドロキシ−2−ナフトエ酸が飲食品に含まれていることを特徴とする、請求項1〜3のいずれか1項に記載の方法。
- 紫外線の遮断機能を有する無色透明の容器若しくは包装体および/または紫外線の遮断機能を有する無色透明のフィルムによって覆われた容器若しくは包装体に充填する工程を含むことを特徴とする、1,4−ジヒドロキシ−2−ナフトエ酸を含有する飲食品の製造方法。
- 紫外線の遮断機能を有する無色透明の容器若しくは包装体および/または紫外線の遮断機能を有する無色透明のフィルムによって覆われた容器若しくは包装体に充填されたことを特徴とする、1,4−ジヒドロキシ−2−ナフトエ酸を含有する飲食品。
