Claims (3)
- 水と、食物繊維としての難消化性デキストリンと、少なくとも、食酢、フルボ酸、ミネラル塩を含むフルボ酸ミネラル調味液と、を含有した食物繊維含有の生だし。
- 水100に対して、難消化性デキストリンを水の1〜10重量%、前記フルボ酸ミネラル調味液を水の0.03〜0.1重量%、添加した請求項1に記載の食物繊維含有の生だし。
- 水を沸騰させる沸騰ステップと、
前記ステップにより沸騰させた水に、削り節を投入して沸騰させる削り節投入ステップと、
前記ステップにより投入した削り節を抽出する削り節抽出ステップと、
前記ステップにより削り節を抽出した後の水に、食物繊維としての難消化性デキストリンと、少なくとも、食酢、フルボ酸、ミネラル塩を含むフルボ酸ミネラル調味液と、を配合する配合ステップと、
前記ステップにより得た配合液を攪拌する攪拌ステップと、
を含む食物繊維含有の生だしの製造方法。
