Claims (1)
- 食品生地収納容器とその内部において回転駆動される撹拌子並びに上記食品生地収納容器の加熱源を備えた竪型ミキサーにより、その食品生地収納容器に収納されたメレンゲや全卵、生クリーム、スポンジ生地などの各種ホイップ食品生地を泡立て作用するに当り、
その泡立て作用中に変化する上記ホイップ食品生地の導電率を、上記食品生地収納容器の内部を撹拌子と一緒に公転運動する無線式の導電率検知センサーによって、リアルタイムに測定検知し、
その導電率検知センサーが予じめ設定された途中の半成目標測定値に到達したことを検知した出力信号に基いて、上記撹拌子の回転速度又は/及び上記加熱源の加熱力が異なる泡立て作用の次工程に移行させ、
その後、同じく導電率検知センサーが予じめ設定された最終の仕上がり目標測定値に到達したことを検知した出力信号に基いて、上記撹拌子の回転駆動のみか又はその回転駆動と上記加熱源による加熱とを停止させるべく自動制御することを特徴とするホイップ食品生地を対象とするミキサーの運転方法。
