Description
高β−グルカン大麦麦芽ではない大麦麦芽を48重量%、及び副原料として高β−グルカン裸麦を52重量%含む大麦原料を使用して発泡性アルコール飲料である本飲料を製造した。すなわち、まず、2Lの湯(50℃)に、259gの大麦麦芽(原料あたり47.3重量%)、281gの高β−グルカン裸麦(原料あたり51.4重量%)、0.56gの市販のβ−グルカナーゼ(4.15U/g−高β−グルカン裸麦)、0.04gの市販のα−アミラーゼを添加して原料液を調製した。
上述のようにして製造した本飲料の一部をサンプルとして使用し、当該発泡性アルコール飲料に含まれるα−グルカン及びβ−グルカンを定量した。すなわち、サンプル中のα−グルカン及びβ−グルカンをそれぞれ酵素で加水分解し、生じたグルコースをグルコースオキシダーゼ反応及び比色法により定量し、最終的に、加水分解による水の増加分に基づく補正を行って、本飲料におけるα−グルカン及びβ−グルカンの含有量を算出した。
上述のようにして製造した本飲料の一部をサンプルとして使用し、当該本飲料に含まれるアラビノキシランを定量した。すなわち、サンプル、及び市販の小麦由来アラビノキシラン(300kDa P−WAXYM、Megazyme社製)を含む標準液のそれぞれに含まれるアラビノキシランを酵素で加水分解し、加水分解後の当該サンプル及び標準液中のキシロース含有量を測定し、当該測定値に基づいて当該サンプル中のアラビノキシラン含有量を算出した。
比較の対照として、市販の発泡性アルコール飲料を準備した。すなわち、市販のビール(大麦麦芽使用比率67%以上)、市販の発泡酒(大麦麦芽使用比率67%未満)、及び発泡酒とスピリッツとを混合して製造された市販の発泡性アルコール飲料をそれぞれ準備した。そして、各飲料の一部をサンプルとして使用して、上述の場合と同様に、当該飲料中の、α−グルカン、β−グルカン及びアラビノキシランの含有量を算出した。
市販の味覚センサー(SA402B、インセント社製)を使用して、市販のビール、市販の発泡酒、発泡酒とスピリッツとを混合して製造された市販の発泡性アルコール飲料及び上述のようにして製造した本飲料の旨味及びコクを評価した。すなわち、ガス抜きした各飲料100mLをサンプルとして使用して、味覚センサーの測定を行い、得られたデータを専用の解析ソフトウェアにより解析した。
本飲料の一部をサンプルとして使用し、当該本飲料に含まれるアラビノキシラン及びβ−グルカンの分子量分布を分析した。まず、サンプルの前処理を行った。すなわち、サンプルに下面発酵酵母を5%(w/v)添加し、20℃で18時間振とうすることにより、当該酵母に当該サンプル中の遊離グルコースを消費させた。その後、サンプルを遠心し、遠心後の上清を回収し、当該上清を0.45μmフィルターによりろ過した。
本飲料の粘度を測定した。粘度は、ウベローデ粘度計を使用して20℃にて測定した。ウベローデ粘度計としては、JIS 8803−1978に準拠し、粘度計定数が0.002〜0.008×10−6m2/s2のものを使用した。

- 500ppm以上のアラビノキシランと、23000ppm以上のα−グルカンとを含み、
20℃の粘度が2.0mPa・s以下である
ことを特徴とする飲料。 - 前記アラビノキシランは、分子量が9000Da以上のアラビノキシランを含む
ことを特徴とする請求項1に記載の飲料。 - 500ppm以上のβ−グルカンをさらに含む
ことを特徴とする請求項1又は2に記載の飲料。 - 前記β−グルカンは、分子量が1000Da以下のβ−グルカンを含む
ことを特徴とする請求項3に記載の飲料。
