Description
〔1〕 ピロリン酸第二鉄が、該ピロリン酸第二鉄100質量部に対して、1〜10質量部のポリオキシエチレンソルビタン脂肪酸エステル又は1〜10質量部のグリセリン脂肪酸エステルと、0.05〜1質量部の酵素分解レシチンとにより被覆されてなり、ゼータ電位が-25〜-39mVであり、平均粒子径が1〜4μmである被覆ピロリン酸第二鉄組成物、並びに
〔2〕 前記〔1〕記載の被覆ピロリン酸第二鉄組成物を、ゼータ電位の絶対値が10mV以下の発酵乳100gあたりピロリン酸第二鉄由来の鉄換算で1.0〜10mg含有してなる、鉄分を強化した発酵乳
に関する。
また、上記乳又は乳製品としては、牛乳等の生乳、脱脂粉乳、全粉乳、生クリーム等の乳製品等からなる獣乳培地や豆乳等を使用することができる。
ピロリン酸第二鉄400gをイオン交換水1600gに混合、分散させ、本分散液を湿式摩砕機ダイノミルによって湿式粉砕を行い、ピロリン酸第二鉄の粉砕物を20質量%含む、ピロリン酸第二鉄組成物を得た。
塩化第2鉄(6水和物)65.6gと表1に示す酵素分解レシチンをイオン交換水304.8gに溶解して鉄溶液を調製し、ピロリン酸四ナトリウム(10水和物)100gをイオン交換水2540gに溶解したピロリン酸溶液中に撹拌下徐々に添加して混合液のpHを3.0に調整した。中和反応によるピロリン酸第二鉄の造塩が終了した後、遠心分離によって固−液分離を行って固相部のピロリン酸第二鉄−酵素分解レシチン複合体を回収した。イオン交換水に再懸濁し、表1に示すグリセリン脂肪酸エステルを添加し、ピロリン酸第二鉄−酵素分解レシチン複合体を4質量%含む被覆ピロリン酸第二鉄組成物1000gを得た。

〔測定方法〕
試料をゼータ電位測定装置上のCount rate(KCPs):測定中に計数した1秒間の1000フォトン単位の計数率が3000以下となるように加え、測定を開始する。
15質量%脱脂粉乳培地(3.5質量%のグルコースを含む)に、ラクトバチルス・カゼイYIT9029のスターターを0.5質量%接種し、37℃でpHが3.6となるまで培養を行い、その後、培養物を15MPaで均質化処理した。その培養物を23重量部と被覆ピロリン酸第二鉄組成物を含有するシロップ(17質量%の砂糖を含む)77重量部を混合し発酵乳(乳酸菌飲料)を製造した。なお、被覆ピロリン酸第二鉄組成物は、実施例1〜12及び比較例1〜5で得られた組成物について、それぞれ発酵乳100gあたりピロリン酸第二鉄由来の鉄量が4.7mgとなるように配合した。得られた発酵乳のpHは3.6、SNFは3.1質量%、ゼータ電位は4.2mVであった。
得られた発酵乳を70℃で30分間加熱した。加熱後、発酵乳成分との凝集の有無を目視により観察し、変化がなければ「○」、変化が認められた場合は「×」として、発酵乳との反応性を評価した。結果を表1に示す。
反応性の評価で使用した実施例1及び比較例4の被覆ピロリン酸第二鉄組成物を含む発酵乳と、被覆ピロリン酸第二鉄組成物を配合せずに得られた発酵乳(比較例6)を、それぞれ80ml(約86g)を容器に入れて密封し、10℃で7、14、21、28日間保存し、ホエイオフ(飲料上部に透明な層が生じる現象)と沈殿を測定した。
実施例1及び比較例4の被覆ピロリン酸第二鉄組成物を用いて得られた発酵乳と、被覆ピロリン酸第二鉄組成物を配合せずに得られた発酵乳(比較例6)を、それぞれ10℃で28日間保存した。調製直後(0日)、14日間保存後、28日間保存後に、風味を評価した。
15質量%脱脂粉乳培地(3.5質量%のグルコースを含む)に、ラクトバチルス・カゼイYIT9029のスターターを0.5質量%接種し、37℃でpHが3.6となるまで培養を行った培養物と3質量%大豆多糖類溶液を混合した混合物を15MPaで均質化処理した。
また、実施例1で得られた被覆ピロリン酸第二鉄組成物(ピロリン酸第二鉄由来の鉄を3.6質量%含む)を0.1質量%含有するシロップ(14質量%の砂糖、0.2質量%のコラーゲンペプチド及び0.06質量%のビタミンCを含む)を調製した。
上記混合物を32重量部とシロップ68重量部を混合し、発酵乳(乳酸菌飲料)を製造した。pHは3.6、SNFは3.1質量%、ゼータ電位-4.5mVであった。
Claims (3)
- ピロリン酸第二鉄が、該ピロリン酸第二鉄100質量部に対して、1〜10質量部のポリオキシエチレンソルビタン脂肪酸エステル又は1〜10質量部のグリセリン脂肪酸エステルと、0.05〜1質量部の酵素分解レシチンとにより被覆されてなり、ゼータ電位が-25〜-39mVであり、平均粒子径が1〜4μmである被覆ピロリン酸第二鉄組成物。
- ゼータ電位の絶対値が10mV以下である発酵乳に配合するための、請求項1記載の被覆ピロリン酸第二鉄組成物。
- 請求項1記載の被覆ピロリン酸第二鉄組成物を、ゼータ電位の絶対値が10mV以下の発酵乳100gあたりピロリン酸第二鉄由来の鉄換算で1.0〜10mg含有してなる、鉄分を強化した発酵乳。
