Claims (3)
- 麹を用いた発酵材料の糖化工程において、麹に、0.5〜20Tの直流磁場を印加して、糖化速度を制御することを特徴とする発酵材料の糖化方法。
- 糖化工程を、5〜60℃で行うことを特徴とする請求項1記載の発酵材料の糖化方法。
- 直流磁場が、超電導マグネットによって発生せしめられたものであることを特徴とする請求項1又は2記載の発酵材料の糖化方法。
