Abstract
【解決手段】麹を用いて発酵材料から発酵食品を製造する際の糖化工程において、麹に、0.5〜20Tの、好ましくは0.5〜10Tの磁場を印加することからなる発酵材料の糖化方法。糖化工程は、5〜60℃で行うのが好ましく、また、超電導マグネットによって発生せしめられた直流磁場を用いるのが好ましい。

Description
かかる糖化工程は、5〜60℃で行うのが好ましく、特に35〜55℃で行うのが好ましい。また、超電導マグネットによって発生せしめられた直流磁場を用いるのが好ましい。
永久電流モードの超電導マグネットを用いることもできる。
Claims (3)
- 麹を用いた発酵材料の糖化工程において、麹に、0.5〜20Tの直流磁場を印加することを特徴とする発酵材料の糖化方法。
- 糖化工程を、5〜60℃で行うことを特徴とする請求項1記載の発酵材料の糖化方法。
- 直流磁場が、超電導マグネットによって発生せしめられたものであることを特徴とする請求項1又は2記載の発酵材料の糖化方法。
