Description
本発明に記載のバーの典型的な配合を、下記の表に示す。
水分を含む材料をすべて50℃で一緒に(シロップ、グリセリン、アーモンドバター及び香料)混合する。別に、乾燥材料を一緒に混合し、その後、先の水分を含んだ材料のスラリーを乾燥材料の混合物に加え、塊を高剪断下で2〜5分間混合する。生地をスラブ状にし、包装前にバー状に切断する。
炭水化物(グルコースとフルクトースが2:1の比の形態)をバーの形態で90g/hで摂取した場合の耐性をテストした。バーは実施例1によって調製した。14人のサイクリストが、自転車で、68マイルを19.5マイル/時の平均速度で走り、6本のバーを消費した(15分毎に約1/2バー)。各ライダーは、走行中の消化管の愁訴に関する質問がある質問表に、走行直後に回答した。結果を図1に示す。
グルコースとフルクトースを2:1の比で調製したバーの外来炭水化物酸化速度を、これもグルコースとフルクトースを2:1の比で調製したスポーツドリンクに対して、またグルコース単独とフルクトース単独での先行研究のデータと比較して、調査した。バーは実施例1によって調製した。8人の男性のサイクリストが約60%の最高酸素摂取量(VO2ピーク)で3時間、研究室で乗車し、バー及びスポーツドリンクが1.55gCHO/minの消費となるように、1/2バーを15分毎に、又は等量をスポーツドリンクで消費した。バー対スポーツドリンクの外来炭水化物酸化速度を計測するために、血液と呼吸のサンプルを3時間通して採取した。各被験者はまた、走行中の消化管の愁訴に関する質問がある質問表に、走行直後に回答した。結果を図2に示す。図2に示されたように、スポーツドリンク又はバーの形態間で炭水化物酸化の統計的差異は見られず、バーは、高効率(約75%)で炭水化物を提供する上で、複数の炭水化物源のスポーツドリンクと同じくらい有効であることが示された。複数の炭水化物源(グルコース:フルクトースが2:1)のバーとドリンクの酸化のピークは、約1.2g/minであり、単一の炭水化物源で達成された数値より相当に高い(グルコース単独で約0.8g/min、及びフルクトース単独で約0.4g/min)。
Claims (17)
- 運動能力を増強する食品の調製のための炭水化物バーの使用であって、前記炭水化物バーは、グルコースとフルクトースを2:1の比で含む炭水化物画分を含む、炭水化物バーの使用。
- 消化管の耐性を増強し、及び/又は前記消化管の問題を治療若しくは予防する食品の調整のための炭水化物バーの使用であって、前記炭水化物バーは、グルコースとフルクトースを2:1の比で含む炭水化物画分を含む、炭水化物バーの使用。
- 前記消化管の問題は、上腹部の問題;下腹部の問題;又は全身性の問題からなる群から選択される、請求項2に記載の使用。
- 運動の後半における血糖維持の強化を可能とする食品の調製のための炭水化物バーの使用であって、前記炭水化物バーは、グルコースとフルクトースを2:1の比で含む炭水化物画分を含む、炭水化物バーの使用。
- 外来炭水化物酸化を増加させ、活動筋に対してエネルギーをより速く運搬し、及び/又は筋肉に持続性エネルギーをより多く供給する食品の調製のための炭水化物バーの使用であって、前記炭水化物バーは、グルコースとフルクトースを2:1の比で含む炭水化物画分を含む、炭水化物バーの使用。
- 疲労の症状を治療若しくは予防し、サイクリングのリズムを改善し、及び/又は自覚的運動強度(ratings of perceived exertion、RPE)を減少させる食品の調製のための炭水化物バーの使用であって、前記炭水化物バーは、グルコースとフルクトースを2:1の比で含む炭水化物画分を含む、炭水化物バーの使用。
- 前記炭水化物バーを、少なくとも30gCHO/hの摂取に対応した量で使用する、請求項1〜6のいずれか一項に記載の使用。
- 前記バーの炭水化物画分が、少なくとも30%のグルコースとフルクトースを含むことを特徴とする、請求項1〜7のいずれか一項に記載の使用。
- 前記バーの炭水化物画分が、バーのエネルギーの少なくとも50%を提供することを特徴とする、請求項1〜8のいずれか一項に記載の使用。
- 前記バーの炭水化物画分が、デキストロース及び/又はマルトデキストリンを含むことを特徴とする、請求項1〜9のいずれか一項に記載の使用。
- 前記バー100g当たり40g未満のタンパク質及び/又はバー100g当たり20g未満の脂肪を含有することを特徴とする、請求項1〜10のいずれか一項に記載の使用。
- 前記バーは、ビタミンを、推奨される一日量の少なくとも10%に相当する量でさらに含有することを特徴とする、請求項1〜11のいずれか一項に記載の使用。
- 前記バーは、電解質及び/又はミネラルをさらに含むことを特徴とする、請求項1〜12のいずれか一項に記載の使用。
- 前記バーは、アミノ酸をさらに含有することを特徴とする、請求項1〜13のいずれか一項に記載の使用。
- 前記バーは、800〜2200kJ/100gのエネルギー密度を有することを特徴とする、請求項1〜14のいずれか一項に記載の使用。
- 前記バーは、10〜200gの供給サイズを有することを特徴とする、請求項1〜15のいずれか一項に記載の使用。
- 前記バーは、アロマ化合物、繊維、カフェイン、保存料、ガラナ、酸性化剤、結合剤、ゲル構成物質、水分、果汁、果実、酸化防止剤、着色料からなる群から選択される1つ又は複数の化合物をさらに含むことを特徴とする、請求項1〜16のいずれか一項に記載の使用。
