Description
本発明は、ポリ不飽和脂肪酸(PUFA)が豊富な油を含有する粒子の製造方法、炭水化物材料中に分散された、PUFAが豊富な油を含有する粒子、及び70℃を上回る温度での油中でのPUFAの酸化防止及び/又は安定性増加のための方法に関する。本発明は更に、前記粒子を含有する食品に関する。
ヒトの健康に対するポリ不飽和脂肪酸(PUFA)の有益な効果は、繰り返し確認されている。PUFAのうち、特に長鎖のオメガ−3脂肪酸、例えばエイコサペンタエン酸(EPA)又はドコサヘキサエン酸(DHA)は例えば、血清コレステロールレベルを低く維持し、不規則な心臓拍動を安定化し、血圧を減少し、自己免疫疾患を改善し、うつ病を改善し、そして大腸癌を予防することが示されている。
驚くべきことに、本発明の発明者は、PUFAが豊富な油を、70℃を上回る、所望の場合には100℃をも上回る温度を伴う方法において、封入するための方法を見出した。意外にもこの方法により封入される油は、悪臭又は異味を発達させることなしに数ヶ月にわたり貯蔵安定性なままであった。本発明の方法は、比較的高い負荷の封入された油を有するものの、カプセルの表面上に取るに足らない量の残留する油を有する有利なカプセルを提供する。更に、前記カプセルは意外にも、有効な酸素バリヤーを提供し、かつこれを酸化−感受性材料を封入するために適したものにする。
−水を少なくとも1つの炭水化物材料に添加して、水性混合物を得る工程;
−この水性混合物を加熱して濃縮したシロップを形成する工程;
−場合により酸化防止剤を含有するPUFAが豊富な油を、濃縮したシロップ中で乳化してエマルションを得る工程;
−このエマルションをダイを通じて押出して押出されたエマルションを得る工程;
−この押出されたエマルションを、低温液体中に装入又は滴下することにより冷却して固体の押出された材料を形成する工程;
−この固体の押出された材料を溶媒液体で洗浄する工程、及び
−前記材料を乾燥させる工程
を含む、ポリ不飽和脂肪酸(PUFA)を含有する油を含有する粒子の製造方法を提供する。
本明細書の文脈において、"含有する"との用語は、"含む、その他の物質の他に"を意味するものとして理解されるべきである。この用語は、"のみから成る"として解釈されることを意図するものではない。
本発明の粒子は、この粒子の合計質量の、低い表面残留油含有量≦0.2%を有することが見出され、有利にはこの粒子の合計質量の質量に対して、表面の油は≦0.1%、より有利には≦0.08%、更により有利には≦0.05%、最も有利には≦0.04%である。表面残留油は、また、表面の油とも本明細書においては呼称され、次のプロトコルにより決定される:

検量線の準備のため:残留表面油含有量を見積もり、予想される含有量を含有するヘキサン中のPUFAが豊富な油の溶液を作成。可能であれば、封入系中で使用される同じ油を使用。可能でなければ、同じ又は極めて類似した特性を有する油を使用。

本発明は、本発明の粒子を含有する食品を提供する。一実施態様において、食品は0.5よりも少ない水分活性を有する。有利には、食品は0.45よりも少ない、0.4よりも少ない、0.35よりも少ない、又は0.3よりも少ない水分活性を有する。最も有利には、この水分活性は0.25、0.2、0.15よりも少なく、又は0.1よりも少ない。食品中の自由水の比較的少ない入手可能性でもって、上述したとおりの水分活性のパラメーターの場合と同様に、本発明の粒子のマトリックスはより長期間にわたり完全なままであり、従ってPUFAが豊富な油を酸素からより良好に保護する。
エルレンマイヤー中に粒子50000gを装入した。
ヘキサン15mLを添加し、前記エルレンマイヤーをすぐさま20分間撹拌した
(粒子の破壊を回避すべく電磁撹拌棒無しで)。
この溶媒−粉体混合物を、25mLのメスフラスコ中に濾過した。
このエルレンマイヤーを2×5mLのヘキサンで洗浄し、このフィルターを1×2mLのヘキサンで洗浄し、この容積を正確に25mLに調整した。

魚油を含有する粒子の製造
アラビアゴムの20質量%水溶液を調整した。前記溶液3.166kgを、水3.66kgと、10barまでの圧力に耐えるのに適し、かつ底部に、ダイ孔を有する出口弁を有するタンク中で混合した。このタンクは機械的攪拌機を備えていた。
例1及び2において得られた粒子を30℃で6ヶ月の間貯蔵した。規則的な間隔で、粒子をスニッフィング(sniffing)により試験した。6ヶ月の期間の間に、魚油臭又は典型的な酸敗臭は検知されなかった。
封入された魚油を含有する食品
0.5未満の水分活性を有する市販の食品を、例1において得られる粒子の変動量(2〜5g)と共に乾燥混合した。発泡タブレット、圧縮タブレットは、標準的な処方及び有効成分無しの手順に従って製造された(標準的なフィルター材料のみ)。同様に、技術水準の手順及び成分でシリアルバーを製造した。これらの粒子の二(2)グラムは、DHAの推奨一日所要量の30%に相当した。
Claims (8)
- 少なくとも1種のポリ不飽和脂肪酸(PUFA)を含有する油を含有する粒子の製造方法において、この方法が次の工程:
− 水を少なくとも1つの炭水化物材料に添加して、水性混合物を得る工程;
− この水性混合物を加熱して濃縮したシロップを形成する工程;
− 前記PUFAを含有する油を、濃縮したシロップ中で乳化してエマルションを得る工程;
− このエマルションを、ダイを通じて押出して押出されたエマルションを得る工程;
− この押出されたエマルションを、冷却液体中に装入又は滴下することにより冷却して固体の押出された材料を形成する工程;
− この固体の押出された材料を溶媒液体で洗浄する工程、及び
− 前記材料を乾燥させる工程
を含む、
ポリ不飽和脂肪酸(PUFA)を含有する油を含有する粒子の製造方法。 - 前記冷却工程及び洗浄工程が両方共に前記冷却液体中で実施され、ここで、前記冷却液体は前記の溶媒液体としても機能する、請求項1記載の方法。
- PUFAを含有する油が、1質量%よりも少ない添加されたアスコルビン酸を含有する、請求項1記載の方法。
- PUFAを含有する油が、更にレシチン1.5〜15質量%を含有する、請求項1記載の方法。
- 溶媒液体が、柑橘類から得られるテルペン類を含有する、請求項1記載の方法。
- PUFAを含有する油が、エイコサペンタエン酸(EPA)、ドコサヘキサエン酸(DHA)、アラキドン酸(ARA)及びこれらのうち少なくとも2種の混合物からなる群から選択されるPUFAを含有する、請求項1記載の方法。
- 前記PUFAを含有する油が、さらに、酸化防止剤を含有する、請求項1から6までのいずれか1項に記載の方法。
