チョコレート : 2780g
バター : 1320g
全卵 : 347g
グラニュー糖 : 834g
薄力粉 : 90g
ココアパウダー : 185g
卵白: : 1390g
Claims (1)
- 35〜45重量%のチョコレート、14〜24重量%のバター、2〜8重量%の全卵、及び、7〜17重量%のグラニュー糖を乳化するまで混ぜ合わせてから、14〜24重量%の卵白を一度にその全量を加えた後、これらを乳化するまで混ぜ合わせて得られるチョコレート生地を、所定形状をした型に流し込み、これを蒸し焼きを行う調理器具内において、温度130〜170℃の範囲内、湿度10%〜30%の範囲内で蒸し焼きして得ることを特徴とするチョコレート菓子の製造方法。
