Description
鶏がらスープを抽出した後の鶏大腿骨残渣(日本ピュアフード(株)、宮崎工場)を原料とした。該鶏がらスープは調味料や添加剤は一切使用せず炊き出すことによりスープ用エキスを抽出した。エキス抽出直後の残渣を食品用袋に密封し速やかに冷凍して2日間冷凍保存した。冷凍残渣2kgを室温にて自然解凍後、電気乾燥炉内に投入し、150℃で24時間乾燥させ、約1kgの乾燥品を得た。
実施例1の乾燥分離により得られた骨部分を卓上型連続粉砕機(同上)を用いて粉砕し、粒子径1mm以下の粉体を得た。得られた粉体を有機物が完全に熱分解・ガス化するように空気流中1000℃で1時間焼成して、粉体材料を得た。この粉体材料をX線回折法(XRD)によって同定した結果を図3に示す。図3からこの粉体材料は結晶性のよいヒドロキシアパタイト粉末であることが分かった。
実施例1で得られた平均粒子径が約363μmの食肉加工品20gを、直径10mmのセラミックスボール約200gと共に容量250mLのセラミックス容器に入れ、次に100gの純水と0.1gの乳化剤(花王(株)製エマゾールL−120V)を添加し、遊星型ボールミル(P−5型、ドイツFRITSCH GmbH製)を用いて、回転数300rpmで10分間粉砕処理を行い、スラリー状の分散物を得た。レーザー回折/散乱式粒子径分析装置(同上)を用いて分析した結果、平均粒子径(メジアン径)が約92μmであった(図5)。
実施例1の乾燥分離により得られた骨部分を卓上型連続粉砕機(同上)を用いて粉砕し、粒子径1mm以下の粉体を得た。得られた粉体を空気流中で300℃で1時間焼成してヒドロキシアパタイトとカーボンとを含むヒドロキシアパタイト含有粉体材料を得た。この粉体材料をX線回折法(XRD)によって分析した結果は図7に示す。ヒドロキシアパタイトの回折ピークが観察されたが、回折線の幅が広いため、結晶性の低いヒドロキシアパタイトが含まれていることが分かった。
Claims (8)
- 食肉と骨とを含む家畜骨材料からエキスを抽出した後の家畜骨残渣の処理方法であって、
前記家畜骨残渣を120℃から200℃の温度範囲で乾燥させる乾燥工程、
乾燥させた前記家畜骨残渣を食肉部分と骨部分とに分離させる分離工程、並びに、
前記食肉部分を粉砕し、食肉加工品とする粉砕工程、及び/又は、
前記骨部分を粉砕し、空気流中300℃から1000℃の温度範囲で焼成してヒドロキシアパタイト含有粉体材料とする焼成工程と
を含む、家畜骨残渣の処理方法。 - 前記乾燥工程の前処理として、前記家畜骨残渣を冷凍処理及び解凍処理を行うことを特徴とする、請求項1に記載の家畜骨残渣の処理方法。
- 前記分離工程が、振動篩い機によって行われることを特徴とする、請求項1又は2に記載の家畜骨残渣の処理方法。
- 前記粉砕工程が、媒体攪拌型粉砕法によって平均粒子径が50μm以下となるよう行われることを特徴とする、請求項1〜3のいずれか一項に記載の家畜骨残渣の処理方法。
- 前記焼成工程によって得られたヒドロキシアパタイト含有粉体材料を、さらに媒体攪拌型粉砕法によって平均粒子径が0.3μm以下となるよう微粉砕することを特徴とする、請求項1〜4のいずれか一項に記載の家畜骨残渣の処理方法。
- 前記家畜骨材料は食肉が付着している鶏骨であることを特徴とする、請求項1〜5のいずれか一項に記載の家畜骨残渣の処理方法。
- 請求項1〜6のいずれか一項に記載の家畜骨残渣の処理方法によって得られることを特徴とする、食肉加工品。
- 前記食肉加工品のカルシウム含有量が2000mg/100g以上であることを特徴とする、請求項7に記載の食肉加工品。
