Description
実施例1においては、原料の一部として、ホップを使用することなく、発芽させたエンドウを使用して発酵前液を調製し、当該発酵前液に酵母を添加してアルコール発酵を行うことによって発泡性アルコール飲料を製造した。
実施例2においては、発酵前液の原料中に占める発芽エンドウの使用比率を変動させることにより、各使用比率で製造される発泡性アルコール飲料の特性がどのように変化するかを検討した。すなわち、原料の一部として、ホップを使用することなく、互いに異なる複数の使用比率で発芽エンドウを使用して複数の発酵前液を調製し、各発酵前液に酵母を添加してアルコール発酵を行うことによって複数の発泡性アルコール飲料を製造した。
実施例3においては、発芽エンドウを使用して、上述の実施例1と同様の製造方法により製造された発泡性アルコール飲料において、日光の照射に伴う日光臭が発生するか否かを検討した。すなわち、まず、原料の一部として、ホップを使用することなく、3日間発芽させた発芽エンドウを当該原料に対して1000ppmの比率で使用して発酵前液を調製し、当該発酵前液に酵母を添加してアルコール発酵を行うことにより発泡性アルコール飲料を製造した。
実施例4においては、上述した実施例1と同様の製造方法において、エンドウに代えて、大豆、小豆、黒豆、緑豆、大正金時、ウズラ豆、ヒタシ豆の7種類の豆類のいずれかを使用して、14種類の発泡性アルコール飲料を製造した。各豆類は、実施例1と同様に、浸豆後に湿潤空気を3日間送風することにより発芽させたものを発芽豆として使用し、又は発芽処理を施していないものを生豆として使用した。
実施例5においては、実施例4と同様に、大豆、小豆、黒豆、緑豆、大正金時の5種類の豆類のいずれかを使用して発泡性アルコール飲料を製造した。各豆類は、実施例4と同様に、浸豆処理後に湿潤空気を3日間又は5日間送風することにより発芽させたものを発芽豆として使用し、又は発芽処理を施していないものを生豆として使用した。
Claims (3)
- 原料の一部として、ホップ及び麦芽を使用することなく、発芽させた豆類を、前記原料のうち0.05質量%〜0.30質量%の範囲内で使用して発酵前液を調製する発酵前工程と、
前記発酵前液に酵母を添加してアルコール発酵を行う発酵工程と、

ことを特徴とする発泡性アルコール飲料の製造方法。 - 前記豆類として、大豆、小豆、黒豆、緑豆、大正金時、トラ豆、ヒヨコ豆、ソラ豆、ウズラ豆、ハナ豆、ヒラ豆、ヒタシ豆からなる群より選択される少なくとも1つを使用する
ことを特徴とする請求項1に記載された発泡性アルコール飲料の製造方法。 - 請求項1又は2に記載された製造方法により製造された
