Claims (4)
- 台金に刃先部位を形成した片刃の包丁において、
刃裏にのみ皮膜が形成され、
前記皮膜は、刃先を含む前記刃先部位の少なくとも一部に形成され、
前記皮膜は、セラミックス粉末から成形した成形体、又はセラミックスと金属粉末あるいは金属の化合物を混合した粉末から成形した成形体、もしくは、前記成形体を加熱処理した成形体、または、Siの固体を電極として、加工油中において前記電極と前記刃先部位との間にパルス放電を行うことにより、溶融した電極材料あるいは前記電極材料の反応生成物から形成され、
前記皮膜と前記台金の刃先部位との境界には5μm〜30μmの深さで混ざり合った傾斜合金層が形成されていることを特徴とする包丁。 - 請求項1に記載の包丁において、
刃表、刃裏のうちの刃の少なくとも一方の側に、被切断物の貼り付きを防止するための凹部が設けられていることを特徴とする包丁。 - 請求項1又は2に記載の包丁であって、
前記刃先とは反対側における前記皮膜の端部は、前記刃物の刃先と背とを互いに結ぶ方向で凹凸を繰り返していることを特徴とする包丁。 - 請求項1〜請求項3のいずれか1項に記載の包丁において、
前記成形体は、Ti、Si、cBN,TiC,WC,SiC,Cr3C 2 ,Al2O 3 ,ZrO2−Y,TiN,及びTiBから構成されるセラミック材料であることを特徴とする包丁。
