Description
さらに、本発明は、微細カット状又はペースト状の青果物に付与する餅々感を、青果物の本来の旨味を失わず、手間をかけずに調整することができる調理済み青果物の製造方法及び調理済み青果物を提供することを目的とする。
以下、本発明の第1実施形態である調理済み青果物の製造方法及び調理済み青果物ついて、図面を参照しつつ詳細に説明する。なお、以下において、%は重量%とする。
まず、図1に示すように、大根を収穫最盛期に収穫する(ステップS1)。次に、収穫した大根を選別及び洗浄する(ステップS2)。その後、収穫した大根の保管量を算定する(ステップS3)。鮮度が低下するまでの期間と生鮮大根を加工する1日の生産能力との関係より、鮮度が低下して無駄にならない量を生鮮大根として生鮮状態のまま保管し(ステップS4のN)、残りの量の大根を原料冷凍工程(ステップS14)にて冷凍し、冷凍大根として冷凍庫に保管する(ステップS4のY)。
収穫工程(ステップS1)と、選別・洗浄工程(ステップS2)と、保管量算定工程(ステップS3)と、生鮮バナナの皮を剥き、切断工程(ステップS5)の後、チョッパーなどを用いてペースト状にする(ステップS6)。冷凍保管する冷凍バナナは、皮を剥き、原料冷凍工程(ステップS14)、解凍工程(ステップS15)、切断工程(ステップS5)を行う。これにより、冷凍バナナは解凍バナナとなる。
以下、第2実施形態に係る調理済み青果物の製造方法及び調理済み青果物について説明する。なお、第2実施形態に係る調理済み青果物の製造方法及び調理済み青果物は、第1実施形態を変形したものであり、特に説明しない部分については、第1実施形態と同様であるものとする。

Claims (5)
- 生鮮青果物、冷凍青果物を解凍した解凍青果物、塩蔵青果物を脱塩した脱塩青果物、及び乾燥青果物を水戻しした水戻し青果物の少なくともいずれか1つを、微細カット状又はペースト状とする加工工程と、
前記生鮮青果物には米粉を5重量%以上35重量%以下の比率で、前記解凍青果物には米粉を10重量%以上40重量%以下の比率で、前記脱塩青果物には米粉を15重量%以上45重量%以下の比率で、前記水戻し青果物には米粉を5重量%以上45重量%以下の比率で混合する混合工程と、
前記混合工程後の前記生鮮青果物、前記解凍青果物、前記脱塩青果物、及び前記水戻し青果物の少なくともいずれか1つと前記米粉との混合物から個別の製品形状を有する成形物を作製する成形工程と、
前記成形工程後、前記成形物に対して餅々感を生み出す調理を目的とする加熱を行う加熱工程と、
加熱工程後、前記成形物について冷蔵及び冷凍のいずれか一方を行う冷蔵工程と、

- 前記加熱工程は、低温スチームで加熱後、油で揚げる又は油で焼くことを特徴とする請求項1から請求項3までのいずれか一項に記載の調理済み青果物の製造方法。
