Description
ウェット食品 (水分>50%) は比較的製造にコストがかかり、また保存料の使用を必要とするが、乾燥食品 (水分<15%) または半乾燥食品 (15%<水分<50%) では不要である。さらに、水分含量が高い食品では一般的に乾燥または半乾燥食品よりも栄養価が低い。
これらの組成物は本発明の方法の実施に好ましく使用される。
しかしながら、別の態様では、このピロリン酸三ナトリウムとこの風味付与剤又は呈味成分とは乾燥または半乾燥ネコ用食品に逐次添加される。
一般的には、ピロリン酸三ナトリウムと風味付与剤は、乾式適用方法を用いて乾燥または半乾燥食品に直接適用される。
これらの基本の要素に加えて、食品はビタミン類、ミネラル類および調味料、保存料、乳化剤や湿潤剤などのその他の添加剤を含んでもよい。
本発明の範囲内で使用できる食品に、乳清、その他の牛乳副生物、炭水化物などのその他の成分を添加することもできる。さらに、既知の調味料、例えばコーンシラップや糖蜜を添加してもよい。
一般的に、風味付与剤又は呈味成分は、酵母エキスを添加もしくは添加していない鶏肉の酵素消化物である。
食欲促進剤を押出乾燥キャットフードに適用する。SPF により用いられる最も普通の適用方法は被覆であり、この主要工程は次の通りである:
−原材料 (脂肪および未被覆の押出乾燥食品) および成分 (リン酸、液状食欲促進剤および粉末) の調製:
−原材料および成分の秤量、
−脂肪の加熱、
−液状風味付与剤の加熱、
−液状風味付与剤とリン酸との混合、
−被覆:
−押出乾燥食品の実際のパイロット塗布機 (=加熱されたバッチタイプの流動化混合 機) への導入、
−液状物の加熱された容器への導入、
−混合の開始、
−6%量での押出乾燥食品上への脂肪の噴霧 (大気圧下) 、
−3%量での液状風味付与剤の押出乾燥食品への噴霧、または1%量での食品への粉末 の振りかけ、
−混合の停止、
−袋詰め、
−保存:試験する前に押出乾燥食品を少なくとも2週間保存する。
2.1 原理
食欲試験は、食品が消費されればされるほど、より食欲を促進するものであるとの仮定に基づく。
2.2 パネルの特性決定
SPF パネルは、欧州のネコの品種の90%を包含する35匹のネコからなり、それにより欧州の集団を代表する。
2.4 試験を行う方法
−同量の食品Aと食品Bを計り取り、同じボウルに入れた。各部分に存在する量は一日の必要量を満たすことができる;
−ボウルの分配:ボウルを小さな穴により接近可能な個々の餌場におく、
−試験の期間:16時間。
2.5 検討したパラメーター
測定パラメーター
−最初の消費された食品;
−試験の終わりまでに消費された各食品の量;
評価パラメーター:
−%による個々の消費率(CR)
CRA =Aの消費量(g) ×100 /A+Bの消費量(g)
CRB =Bの消費量(g) ×100 /A+Bの消費量(g)
⇒平均消費率 (ACR)=個々の率の平均
2.6 統計的分析
2つの率の間に有意な差があるかどうかを決定するために統計的分析を用いる:
ACR ⇒3誤差閾値、すなわち10%、5%および1%でのスチューデントt-検定
押出乾燥食品に脂肪を適用した後、表面に1%のピロリン酸三ナトリウムを振りかけ、この食品を脂肪で被覆されているがピロリン酸塩では被覆されていない同じ押出乾燥食品と比べる。
結論: ピロリン酸三ナトリウムは単独で使用した場合は有効な食欲促進剤ではない。
4.1 試験した組成物
異なる3種類の配合を試験した:2種類は粉末形態であり、1種類は液状の形態である:
液状物:以下を含むXVL0070 と称される混合物:
−VL1009肝臓加水分解物:90重量%
−Na3HP2O7: 10重量%
VL1009液状肝臓加水分解物は、鶏肉副生物および鶏肝臓の混合物から、これを酵素的に加水分解し、次いで85℃で30分間低温殺菌し、リン酸およびソルビン酸カリウムの添加により安定化し、次いでBHT を抗酸化剤として添加することにより得られる。これはSPF-Diana から市販されている。
粉末:以下からなるXVP0036 と称される混合物1:
−VP2003粉末化肝臓加水分解物: 70 重量%
−Na3HP2O7: 30 重量%
VP2003粉末化肝臓加水分解物は、リン酸を含まない液状肝臓加水分解物 (上記配合を参照) から、これにマルトデキストリンを乾燥用支持物として添加して得られる。こうして得られた液状物を噴霧乾燥する。これはSPF-Diana から市販されている。
以下からなるXMP1004 と称される混合物2:
−MP9007粉末化肝臓加水分解物: 55 重量%
−Na3HP2O7: 45 重量%
MP9007粉末化肝臓加水分解物は、鶏肉副生物を含まない液状肝臓加水分解物 (上記粉末配合を参照) から、これにマルトデキストリンを乾燥用支持物として添加して得られる。こうして得られた液状物を噴霧乾燥する。これはSPF-Diana から市販されている。
4.2 結果
風味付与剤を1% (粉末) または3% (液状物) の量で押出乾燥キャットフード上に被覆する。被覆から2週間後、押出乾燥食品を 2つの異なるボウルに入れて35匹のネコに与え、この2種類の食品のそれぞれの消費量を定量する。これらの消費量をスチューデントt-検定を用いて統計的に分析した。
MP9007:粉末化肝臓加水分解物; XMP1004:55%MP9007+45%ピロリン酸三ナトリウム
4.3 結論
従って、ピロリン酸三ナトリウムを含有する食欲促進剤はピロリン酸三ナトリウムを含有しない食欲促進剤よりも、誤差1%の危険率範囲内で著しく食欲促進効果がある。
Claims (11)
- 風味付与剤及び/又は呈味成分にピロリン酸三ナトリウムを混合する工程を含む、乾燥または半乾燥ネコ用食品への使用を意図した食欲促進剤の製造方法。
- ピロリン酸三ナトリウムが前記食欲促進剤中に5〜90重量%の量で存在することを特徴とする、請求項1記載の方法。
- 少なくとも1種の風味付与剤及び/又は呈味成分と共にピロリン酸三ナトリウムを含む組成物を、乾燥または半乾燥食品に適用する工程を含む、乾燥または半乾燥ネコ用食品の嗜好性を改善する方法。
- 少なくとも1種の風味付与剤及び/又は少なくとも1種の呈味成分と共にピロリン酸三ナトリウムを含む、乾燥または半乾燥のネコ用食品のための食欲促進剤。
- 前記食欲促進剤中にピロリン酸三ナトリウムが5〜90重量%の量で存在することを特徴とする、請求項4記載の食欲促進剤。
- ピロリン酸塩が食品の0.01〜3重量%の量で存在するような量で, 請求項4または5記載の食欲促進剤を食品に添加する工程を含む、乾燥または半乾燥ネコ用食品の嗜好性を改善する方法。
- 乾燥または半乾燥ネコ用食品の嗜好性を改善する方法であり、該食品が少なくとも1種の風味付与剤及び/又は呈味成分を含む食欲促進剤を含有し、該方法が該食品にピロリン酸三ナトリウムを添加する工程を含む、前記方法。
- 少なくとも1種の風味付与剤又は呈味成分に、ピロリン酸三ナトリウムを混合する工程を含む、乾燥または半乾燥ネコ用食品のための風味付与剤又は呈味成分の食欲促進効果を向上させる方法。
- 風味付与剤又は呈味成分を、乾燥または半乾燥ネコ用食品に適用する前に、ピロリン酸三ナトリウムと混合する、請求項8記載の方法。
- ピロリン酸三ナトリウムおよび、風味付与剤もしくは呈味成分を、乾燥または半乾燥ネコ用食品に逐次添加する、請求項8記載の方法。
- ピロリン酸三ナトリウムを5〜90重量%の濃度で用いる請求項8記載の方法。
