Abstract
【解決手段】本発明の脂溶性ビタミンの保存方法は、ビタミンAを含有するゲル状あるいは半固形状をなす経腸栄養剤中において、前記ビタミンAを安定に保存するための方法であり、前記経腸栄養剤中において、前記ビタミンAに、乳カゼインおよび大豆たん白質のうちの少なくとも一方からなるたん白質と、アルギン酸および/またはその塩類とを共存させつつ保存することを特徴とする。

Description
(1) ビタミンAを含有するゲル状あるいは半固形状をなす経腸栄養剤中において、前記ビタミンAを安定に保存するための脂溶性ビタミンの保存方法であって、
前記経腸栄養剤中において、前記ビタミンAに、乳カゼインおよび大豆たん白質のうちの少なくとも一方からなるたん白質と、アルギン酸および/またはその塩類とを共存させつつ保存する際に、
前記経腸栄養剤中の前記ビタミンAの含有量をA[wt%]とし、前記たん白質の含有量をB[wt%]としたとき、前記ビタミンAの含有量と、前記たん白質の含有量との比であるB/Aが5×10 2 〜1×10 5 なる関係を満足し、かつ、前記経腸栄養剤中の、アルギン酸および/またはその塩類の含有量が0.2〜1.0wt%であることを特徴とする脂溶性ビタミンの保存方法。
本発明の脂溶性ビタミンの保存方法は、ビタミンAを含有するゲル状あるいは半固形状をなす経腸栄養剤中において、前記ビタミンAを安定に保存するための脂溶性ビタミンの保存方法であり、前記経腸栄養剤中において、前記ビタミンAに、乳カゼインおよび大豆たん白質のうちの少なくとも一方からなるたん白質と、アルギン酸および/またはその塩類とを共存させつつ保存することを特徴とする。これにより、経腸栄養剤中における脂溶性ビタミンの安定性を、長期に亘って向上させることができる。
大豆たん白質は、脂溶性ビタミンの異性化を低減する安定化剤としての機能に特に優れるものである。さらに、大豆たん白質は、消化吸収性に優れるばかりでなく、例えば、脂質代謝促進、疲労回復促進、基礎代謝促進、筋肉増強促進および食事誘導性熱代謝促進等の生理活性促進作用を有し、窒素源やアミノ酸供給のための栄養素としても特に優れるものである。そのため、本発明で用いられるたん白質として、大豆たん白質が特に好適に選択される。
ビタミンAとしては、例えば、レチノール(ビタミンA1)、3−デヒドロレチノール(ビタミンA2)、レチナール、3−デヒドロレチナール、レチノイン酸および3−デヒドロレチノイン酸の他、これらの酢酸エステルおよびパルミチン酸エステル等の誘導体が挙げられる。
1.たん白質の添加の有無の検討
1−1.たん白質として乳カゼインを添加した場合の検討
以下の参考例1および比較例1において、それぞれ液状の経腸栄養剤を調製した。
たん白質として乳カゼインを含有する表1に示す割合の栄養素(栄養成分)を含む液状の経腸栄養剤をアルミパウチ内に充填された状態で以下に示すような工程を経て調製した。
なお、この経腸栄養剤のpHは、6.5であった。
経腸栄養剤中に含まれる栄養素(栄養成分)を表1のようにして、たん白質(乳カゼイン)に代えてペプチド(乳カゼインペプチド)を用いた以外は、前記参考例1と同様にして、液状の経腸栄養剤をアルミパウチ内に充填された状態で調製した。
なお、この経腸栄養剤のpHは、6.4であった。
以下の実施例1〜3、比較例2において、大豆たん白質および大豆たん白質ペプチドの含有量がそれぞれ異なるゲル状の経腸栄養剤を調製した。
たん白質として大豆たん白質を含む表3に示す割合の栄養素(栄養成分)と、寒天およびアルギン酸とを含有するゲル状の経腸栄養剤をアルミパウチ内に充填された状態で以下に示すような工程を経て調製した。
経腸栄養剤中に含まれる、栄養素(栄養成分)と、寒天およびアルギン酸との配合量を表3のようにして、窒素源として大豆たん白質と大豆たん白質ペプチドとを含むようにしたこと以外は、前記実施例1と同様にして、経腸栄養剤をアルミパウチ内に充填された状態で調製した。
経腸栄養剤中に含まれる、栄養素(栄養成分)と、寒天およびアルギン酸との配合量を表3のようにして、窒素源として大豆たん白質ペプチドを含むようにしたこと以外は、前記実施例1と同様にして、経腸栄養剤をアルミパウチ内に充填された状態で調製した。
以下の参考例2、実施例4において、それぞれ、ゲル状の経腸栄養剤および液状の経腸栄養剤を調製した。
表4に示すように、たん白質として大豆タンパク質と乳カゼインとを含有するようにした以外は、前記参考例1と同様にして、寒天およびアルギン酸の添加が省略された液状の経腸栄養剤をアルミパウチ内に充填された状態で調製した。

以下の参考例3、実施例5〜8において、たん白質として大豆たん白質と乳カゼインとを含み、寒天およびアルギン酸の添加量がそれぞれ異なるゲル状の経腸栄養剤を調製した。
経腸栄養剤中に含まれる寒天およびアルギン酸の含有量を、表6に示すようにした以外は、前記実施例4と同様にして、経腸栄養剤をアルミパウチ内に充填された状態で調製した。
Claims (2)
- ビタミンAを含有するゲル状あるいは半固形状をなす経腸栄養剤中において、前記ビタミンAを安定に保存するための脂溶性ビタミンの保存方法であって、
前記経腸栄養剤中において、前記ビタミンAに、乳カゼインおよび大豆たん白質のうちの少なくとも一方からなるたん白質と、アルギン酸および/またはその塩類とを共存させつつ保存する際に、
前記経腸栄養剤中の前記ビタミンAの含有量をA[wt%]とし、前記たん白質の含有量をB[wt%]としたとき、前記ビタミンAの含有量と、前記たん白質の含有量との比であるB/Aが5×10 2 〜1×10 5 なる関係を満足し、かつ、前記経腸栄養剤中の、アルギン酸および/またはその塩類の含有量が0.2〜1.0wt%であることを特徴とする脂溶性ビタミンの保存方法。 - 前記経腸栄養剤を40℃で3箇月間保存したとき、前記経腸栄養剤中における前記ビタミンAの残存率は、60%以上である請求項1に記載の脂溶性ビタミンの保存方法。
