Claims (6)
- 原料米を糊化度が80%〜96%となる状態に炊く炊飯工程と、該炊飯工程を経た米飯をバラ状急速凍結する1次冷凍工程と、該1次冷凍工程後の米飯の表面に水をコーティングさせる加水工程と、該加水工程後の米飯を再度バラ状急速凍結する2次冷凍工程とを含んでいることを特徴とする冷凍米飯の製造方法。
- 前記炊飯工程が、原料米を蒸す蒸し工程と、該蒸し工程後の原料米を80℃〜100℃の湯で湯煎する湯煎工程と、該湯煎工程後の原料米を湯煎温度と同等又はそれ以下の温度で乾燥させる乾燥工程とを含んでいることを特徴とする請求項1記載の冷凍米飯の製造方法。
- 前記加水工程の水が調味料を含んでいることを特徴とする請求項1記載の冷凍米飯の製造方法。
- 前記加水工程の水が多糖類、タンパク質及び/又はその加工物のうち1種類以上を含んでいることを特徴とする請求項1記載の冷凍米飯の製造方法。
- 請求項1乃至4のいずれか1項に記載された製造方法によって得られたことを特徴とする冷凍米飯。
- 請求項5によって得られた冷凍米飯を、加圧した状態で解凍加熱することを特徴とする冷凍米飯の解凍方法。
