Claims (8)
- 飯粒をバラ状に凍結させたバラ状冷凍米飯にコーティング液を添加しながら撹拌することにより複数の飯粒同士が連結した複粒状態とし、該複粒状態で凍結させたことを特徴とする複粒化した冷凍米飯。
- 飯粒をバラ状に凍結させたバラ状冷凍米飯にコーティング液を添加しながら撹拌することにより複数の飯粒同士が連結した複粒状態とし、該複粒状態で凍結させることを特徴とする複粒化した冷凍米飯の製造方法。
- 前記複粒状態は、飯粒全体の60%以上が4粒以上、かつ、90%以上が20粒以下で連結した状態であり、比容積が2.0ml/g以上であることを特徴とする請求項2記載の複粒化した冷凍米飯の製造方法。
- 複粒状態の冷凍米飯のベースとなる前記バラ状冷凍米飯は、飯粒全体の40%以上が3粒以下の状態にバラ化されていることを特徴とする請求項2又は3記載の複粒化した冷凍米飯の製造方法。
- 前記コーティング液は、穀物澱粉を含んでいることを特徴とする請求項2乃至4のいずれか1項記載の複粒化した冷凍米飯の製造方法。
- 前記穀物澱粉が、うるち米内部の個々の細胞の単位が残った状態で粉にした米粉であることを特徴とする請求項5記載の複粒化した冷凍米飯の製造方法。
- 前記コーティング液を添加するときの前記バラ状冷凍米飯の温度が−40℃〜−5℃の範囲であることを特徴とする請求項2乃至6のいずれか1項記載の複粒化した冷凍米飯の製造方法。
- 前記バラ状冷凍米飯にコーティング液を添加するときの撹拌を、撹拌羽根を持たない回転ドラムで行うことを特徴とする請求項2乃至7のいずれか1項記載の複粒化した冷凍米飯の製造方法。
