前記高栄養価α化加工米に対して、動植物の栄養粉末として、動物の肉、魚介類の身、野菜、果物、茸類の少なくとも1つを微細な粉末状として用いたものとすることができる。

Claims (2)
- 玄米又は搗精白米の原料米を研磨して玄米表層セルロース又は白米表面糠を除去した米粒の表面に動植物の栄養粉末、植物性栄養液及び植物油のうちの少なくとも1つの栄養成分を、適量の水とともに加えて混合し、栄養粉末、栄養液及び植物油の少なくとも1つの栄養成分を付着させ、その原料米に気密性の加熱室内でマイクロ波照射による加熱と米粒からの水分の蒸発による蒸らし作用で米粒をα化させ、この加熱で米粒を膨らましてその表面に微細孔、微細クラックを生じさせてこの加熱で生じる米粒内からの水分の蒸気で溶解した栄養成分を米粒内に含浸させ、減圧処理による冷却乾燥で前記微細孔、微細クラックを閉じて栄養成分を米粒内に閉じ込め、所定範囲の水分量を含むように加工した高栄養価α化加工米。
- 前記動植物の栄養粉末として、動物の肉、魚介類の身、野菜、果物、茸類の少なくとも1つを微細な粉末状として用いたことを特徴とする請求項1に記載の高栄養価α化加工米。
