Abstract
Description
a)デンプンを含有する原材料から得られた天然の粒状デンプンを含有するスラリーを提供する工程と、
b)アンモニアを添加することによって、またはそのスラリーの中でアンモニアを放出するかまたは発生させる能力を有する1つ以上の化合物を添加することによって、そのスラリーをアルカリ化する工程と、
c)そのスラリーのpHを7〜10の値に調節する工程と、
d)前記アンモニアと反応させるために、活性な塩素の供給源である少なくとも1つの酸化剤をそのスラリーに添加する工程と、
e)任意の残留酸化剤、異味、望ましくない臭いを除去するために、少なくとも1つの有機酸または1つの亜硫酸水素塩をそのスラリーに添加する工程と、
f)長期の倉庫保管の間の、デンプンの実現された抑制を安定化させるために、少なくとも1つの抗酸化剤をそのスラリーに添加する工程を含んでいる。
a)アンモニウム化合物、好ましくは酸のアンモニウム塩、好ましくは酢酸アンモニウム、塩化アンモニウム、またはクエン酸アンモニウムと、水酸化化合物、好ましくはアルカリ金属またはアルカリ土類金属の水酸化物であり、反応してアンモニウム化合物からアンモニアを放出する化合物、または
b)使用したデンプンからの残留タンパク質の、スラリーの中にすでに存在するアミノ酸からアンモニアを放出する酵素、または
c)使用したデンプンからの残留タンパク質の、スラリーの中にすでに存在するα-アミノ酸からアンモニアを放出する酸化剤、または
d)アミドと、場合によりアルカリまたは酸であり、スラリーの中でそのアミドからアンモニアを放出する化合物。
実施例1a)と1b)には、活性な塩素を所定量含む次亜塩素酸ナトリウムをアンモニアに組み合わせて粒状デンプンを抑制する方法が開示されており、到達する抑制レベルも、アンモニアは添加しないが活性な塩素の添加量は同じである同じ天然の粒状デンプンの抑制と比較して開示されている。粒状デンプン原材料は、ワキシートウモロコシデンプン(コーンスターチ)であり、残留タンパク質の含量は、Kjeldahl法で分析し、6.25というタンパク質変換因子で計算すると0.4%未満である。
実施例2には、アンモニアに次亜塩素酸ナトリウムを組み合わせたわずかなアルカリ化を利用して粒状デンプンを抑制する方法が開示されている。この実施例はさらに、抗酸化剤としてクエン酸を添加することによって抑制レベルがさらにどれほど改善されるかを示していることが、図4からわかる。この実施例は、デンプンを硬水で調理することによって粘性が上昇することも示している。実施例2で用いる天然の粒状デンプンは、ワキシートウモロコシデンプン(コーンスターチ)であり、残留タンパク質含量は、Kjeldahl法で分析し、6.25というタンパク質変換因子で計算すると0.4%未満である。
実施例3には、アンモニアが結合したアンモニウム塩(すなわち不揮発性の塩の形態になったアンモニア)に次亜塩素酸ナトリウムを組み合わせたわずかなアルカリ化によって粒状デンプンを抑制する方法が開示されているが、ここではその次亜塩素酸塩を添加する前にアルカリ化して反応pH値にした後、粒状デンプンを抑制する。この実施例は、実施例2におけるように抗酸化剤としてのクエン酸を添加することによって倉庫保管期間中も安定な完全反応経路を示している。実施例3で用いる天然の粒状デンプンは、ワキシートウモロコシデンプン(コーンスターチ)であり、残留タンパク質含量は、Kjeldahl法で分析し、6.25というタンパク質変換因子で計算すると0.4%未満である。
実施例4には、添加するアンモニアと酸化剤である次亜塩素酸ナトリウムのモル比を変えたわずかなアルカリpHを利用して粒状デンプンを抑制する方法が開示されている。
この実施例には、アンモニアにpHが10の次亜塩素酸ナトリウムを組み合わせて粒状デンプンを抑制する方法により、実施例2で得られたのと同様の抑制になることが開示されている。粒状デンプン原材料は、ワキシートウモロコシデンプン(コーンスターチ)であり、残留タンパク質含量は、Kjeldahl法で分析し、6.25というタンパク質変換因子で計算すると0.4%未満である。
実施例2に従って製造したデンプンを蒸留水の中に5%DMで懸濁させて調理した。デンプンペーストを10人の熟練した評価者に与え、異味と臭いに関する評価を受けた。2人がデンプン中のトウモロコシ/コーンの風味についてコメントした。8人は、実施例2に従って製造したデンプン中の異味を検出することができなかった。
実施例2に従って製造したデンプンを用いて果実調製物を製造した。その基本的組成は以下の通りである:
・ラズベリー 30%
・糖 30%
・デンプン 5%
・水 35%。
デンプンを水の中に懸濁させ、ラズベリーをその中に混合した。この混合物をストーブの上で撹拌しながら沸点まで加熱した。この混合物が沸騰し始めたとき、糖を添加して溶かした。果実調製物を冷却し、実施例4と同じ熟練した評価者に与えて味と風味に関する評価を受けた。
Claims (18)
- 抑制デンプンを調製する方法であって、
a)デンプンを含有する原材料から得られた天然の粒状デンプンを含有するスラリーを提供する工程と、
b)アンモニアを添加することによって、またはそのスラリーの中でアンモニアを放出するかまたは発生させる能力を有する1つ以上の化合物を添加することによって、そのスラリーをアルカリ化する工程と、
c)そのスラリーのpHを7〜10の値に調節する工程と、
d)前記アンモニアと反応させるために、活性な塩素の供給源である少なくとも1つの酸化剤をそのスラリーに添加する工程と、
e)任意の残留酸化剤、異味、望ましくない臭いを除去するために、少なくとも1つの有機酸または亜硫酸水素塩をそのスラリーに添加する工程と、
f)長期の倉庫保管の間の、デンプンの実現された抑制を安定化させるために、少なくとも1つの抗酸化剤をそのスラリーに添加する工程を含む、方法。 - 前記スラリーに添加されるアンモニア、または前記スラリーの中で放出されるかまたは発生するアンモニアが、0.01〜10%w/wのDMデンプン、好ましくは0.03〜5%w/wのDMデンプン、より好ましくは0.05〜3.0%w/wのDMデンプンという量のデンプンスラリーの中に存在する、請求項1に記載の方法。
- 抑制される前記デンプンが、ジャガイモデンプン、トウモロコシデンプン(コーンスターチ)、タピオカデンプン、オオムギデンプン、コメデンプン、コムギデンプン、ライムギデンプン、オートムギデンプン、アマランスデンプン、キノアデンプン、サゴデンプン、マメデンプン、エンドウマメデンプン、フロリディアンデンプン、ワキシージャガイモデンプン、ワキシーコーンスターチ、ワキシータピオカデンプン、ワキシーオオムギデンプン、ワキシーコメデンプン、ワキシーモロコシデンプン、ワキシーコムギデンプン、ワキシーエンドウマメデンプン、高アミロースデンプン、またはこれらの2つ以上の組み合わせである、請求項1〜2のいずれか1項に記載の方法。
- 前記スラリーの中でアンモニアを放出するかまたは発生させる能力を有する前記1つ以上の化合物が、
a)アンモニウム化合物、好ましくは酸のアンモニウム塩、好ましくは酢酸アンモニウム、塩化アンモニウム、またはクエン酸アンモニウムと、水酸化化合物、好ましくはアルカリ金属またはアルカリ土類金属の水酸化物であり、反応して前記アンモニウム化合物からアンモニアを放出する化合物、
b)使用したデンプンからの残留タンパク質の、前記スラリーの中にすでに存在するアミノ酸からアンモニアを放出する酵素、
c)使用したデンプンからの残留タンパク質の、前記スラリーの中にすでに存在するα-アミノ酸からアンモニアを放出する酸化剤、または
d)アミドと、場合によりアルカリまたは酸であり、前記スラリーの中でそのアミドからアンモニアを放出する化合物
である、請求項1〜3のいずれか1項に記載の方法。 - 前記酸化剤が活性な塩素の供給源であり、好ましくは次亜塩素酸塩または次亜塩素酸である、請求項1〜4のいずれか1項に記載の方法。
- 請求項1の工程c)でpHを8〜9の値に調節する、請求項1〜5のいずれか1項に記載の方法。
- 請求項1の工程d)の間の反応温度が5〜70℃である、請求項1〜6のいずれか1項に記載の方法。
- 前記次亜塩素酸塩が、次亜塩素酸ナトリウム、次亜塩素酸カルシウム、次亜塩素酸マグネシウム、または次亜塩素酸カリウムである、請求項1〜7のいずれか1項に記載の方法。
- 前記酸化剤を、0.03〜30%w/wのDMデンプン、好ましくは0.05〜10%w/wのDMデンプン、より好ましくは0.1〜4%w/wのDMデンプンという量で添加する、請求項1〜8のいずれか1項に記載の方法。
- 前記少なくとも1つの有機酸が、クエン酸、アジピン酸、乳酸、アスコルビン酸、コハク酸と、これらの酸の塩形態である、請求項1〜9のいずれか1項に記載の方法。
- 前記少なくとも1つの有機酸または亜硫酸水素塩を、抗体酸化剤として、0.001〜5%w/wのDMデンプン、好ましくは0.01〜3%w/wのDMデンプン、より好ましくは0.05〜1%w/wのDMデンプンという量で添加する、請求項1〜10のいずれか1項に記載の方法。
- 前記少なくとも1つの抗酸化剤が、アスコルビン酸、アスコルビン酸ナトリウム、アスコルビン酸カルシウム、エリソルビン酸、エリソルビン酸ナトリウム、乳酸ナトリウム、乳酸カリウム、乳酸カルシウム、クエン酸、クエン酸一ナトリウム、クエン酸二ナトリウム、クエン酸三ナトリウム、クエン酸一カリウム、クエン酸三カリウム、クエン酸一カルシウム、クエン酸二カルシウム、クエン酸三カルシウム、L-酒石酸、L-酒石酸一ナトリウム、L-酒石酸二ナトリウム、L-酒石酸一カリウム、L-酒石酸二カリウム、L-酒石酸ナトリウムカリウム、リン酸、リン酸一ナトリウム、リン酸二ナトリウム、リン酸三ナトリウム、リン酸一カリウム、リン酸二カリウム、リン酸三カリウム、リン酸一カルシウム、リン酸二カルシウム、リン酸三カルシウム、リン酸一マグネシウム、リン酸二マグネシウム、リンゴ酸ナトリウム、リンゴ酸水素ナトリウム、リンゴ酸カリウム、リンゴ酸カルシウム、リンゴ酸水素カルシウム、メソ酒石酸、L-酒石酸カルシウム、アジピン酸、アジピン酸ナトリウム、アジピン酸カリウム、コハク酸、クエン酸三アンモニウム、またはこれらの2つ以上の組み合わせである、請求項1〜11のいずれか1項に記載の方法。
- 前記抗酸化剤を、0.001〜10%w/wのDMデンプン、好ましくは0.01〜5%w/wのDMデンプン、より好ましくは0.1〜3%w/wのDMデンプンという量で添加する、請求項1〜12のいずれか1項に記載の方法。
- 前記デンプンをまた、アセチル化、ヒドロキシプロピル化、化学的架橋、OSA修飾、酵素処理、デキストリン化、そのデンプンを冷水に溶けるようにするための糊化、そのデンプンを冷水で膨潤させるための抑制前のアルファ化、またはこれらの2つ以上の組み合わせによって加工する、請求項1〜13のいずれか1項に記載の方法。
- 請求項1〜14のいずれか1項に記載の方法に従って製造されて、蒸留水中で調理されたときと比べて硬水中で調理されたときに増大した粘性を持つとして識別される、デンプン。
- 請求項1〜14のいずれか1項に記載の方法に従って調製されて、倉庫保管安定性が改善されている、抑制デンプン。
- 食品中の1つの成分としての、請求項15または16に記載の抑制デンプンの使用。
- 請求項16に記載の抑制デンプンを含有する食品であって、さまざまな種類のソース;スープ;乳製品、好ましくは発酵したクレームフレーシュとヨーグルト;バッターとパン粉;乳製品および/または焼いた製品のための果実調製物、好ましくは焼成に対して安定な果実調製物;ミルクをベースとしたデザート、好ましくはプディング、バニラソース、アイスクリーム、ムースから選択される、食品。
