Abstract
Description
− 健康に対する有害な影響:動物性製品の消費は、ヒトにおける多くの疾病の原因である(心臓血管系疾患、炎症性疾患、糖尿病など);消費される動物性製品中の或る種の汚染物質の大量の存在;頻度の高い家畜伝染病の突発;耐性細菌株の出現に寄与する抗生物質の大量使用;
− 動物の粗悪待遇;
− 温室効果ガス、土壌汚染、地表水、自由地下水、集中的森林伐採の主たる発生源。
− 微細藻類または微細藻類抽出物、シアノバクテリアまたはシアノバクテリア抽出物、及びSchizochytrium及びAuriantochytrium属の海生菌類または海生菌類抽出物、またはこれらの水生植物性成分のうちの少なくとも2つの成分の混合物の中から選択された少なくとも1つの水生植物性成分と、
− 少なくとも1つの別の植物性成分と、
を含む食材であって、
前記水生成分または前記水生成分のうちの少なくとも2つの成分の混合物が食材の少なくとも5重量%を占めている食材にある。
本発明の意味合いにおける「別の植物性成分」とは、微細藻類、海生菌類またはシアノバクテリア以外の植物のバイオマスまたは抽出物のことである。本発明の意味合いにおける「バイオマス」とは、全細胞物質(植物、植物の一部分、藻類、微細藻類、海生菌類、シアノバクテリアなど)のことである。本出願において、植物に言及されるときにいかなる詳細も示されていない場合、それはバイオマスを意味するものとみなさなければならない。これは、天然のバイオマスまたは処理済みバイオマスのいずれであってもよい。
− 微細藻類または微細藻類抽出物、シアノバクテリアまたはシアノバクテリア抽出物、及びSchizochytrium及びAuriantochytrium属の海生菌類または海生菌類抽出物、またはこれらの水生植物性成分のうちの少なくとも2つの成分の混合物の中から選択された少なくとも1つの水生植物性成分と、

− 詳細には寒天及び/またはアルギン酸塩及び/または他の植物性多糖類(コンニャク、アミドン、ペクチン、マルトデキストリンなど)の中から選択された、ゲル化植物性成分、すなわちゲル化能を有する植物、
− 植物性脂肪、植物油、香辛料、植物性タンパク質及び植物性繊維、
− 脱臭ココナッツ脂肪、中性植物油、ペクチン、パプリカ、グルテン、成形豆腐、成形エンドウマメタンパク質、根菜繊維、
− 海生大型藻類。
− バイオマス及び/または抽出物の混合、
− 疎水性相(使用されるバイオマス及び/または抽出物の脂質及び色素)及び親水性相(使用されるバイオマス及び/または抽出物のタンパク質、ぺプチド及び多糖類の機械的均質化
− 好ましくはカット加工及び/または押出し調理及び/または3次元印刷による、均質化された化合物及び抽出物の混合物の機械的かつ/または物理化学的食感付与。
− 当業者には公知の適応したあらゆる方法(例えば分画及び/または超臨界CO2抽出)を用いた、食材を構成する異なるバイオマスの対象化合物の抽出、
− 異なる脂質抽出物及びカロテノイド色素の含油樹脂(アスタキサンチン及び/またはパプリカ及び/または他のカロテノイド色素の濃縮物)の混合、
− ペプチド濃縮物及び/または植物性タンパク質及び/または微生物(酵母、菌類、細菌)の加水分解生成物の添加を伴う、濃縮溶液での異なる成分のタンパク質抽出物の調製、
− 異なる成分に由来する食物繊維及び植物性多糖類(可溶性及び/または不溶性)の均質な混合。
− 海産製品、特に魚介または海産物、詳細にはサケ(鮮魚またはくん製)またはマグロ(鮮魚または調理品)、または小エビ、タマキガイ、カニ、ロブスター、または
− 畜肉、特に畜肉ステーキ。
Claims (18)
- 繊維状構造を有する食材において:
− 微細藻類または微細藻類抽出物、シアノバクテリアまたはシアノバクテリア抽出物、及びSchizochytrium及びAuriantochytrium属の海生菌類または海生菌類抽出物、またはこれらの水生植物性成分のうちの少なくとも2つの成分の混合物の中から選択された少なくとも1つの水生植物性成分と、
− 少なくとも1つの別の植物性成分と、
を含む食材であって、
前記水生植物性成分または前記水生植物性成分のうちの少なくとも2つの成分の混合物が食材の少なくとも5重量%を占めている食材。 - 前記少なくとも1つの水生植物性成分が、Odontella、Dunaliella、Tetraselmis、Chlorella、Haematococcus属の微細藻類または微細藻類抽出物、Arthrospira、Spirulina属のシアノバクテリアまたはシアノバクテリア抽出物、及びSchizochytrium及びAuriantochytrium属の海生菌類または海生菌類抽出物またはこれらの水生植物性成分のうちの少なくとも2つの成分の混合物の中から選択されることを特徴とする、請求項1に記載の食材。
- 少なくとも1つの水生植物性成分が、Odontella aurita、Schizochytrium aggregatum、Schizochytrium limacinum、Schizochytrium minutum、Auriantochytrium mangrovei、Dunaliella salina、Tetraselmis chuii、Chlorella sorokiniana、Arthrospira platensis、Arthrospira maxima及びHaematoccosus pluvialisまたはこれらの成分のうちの少なくとも2つの成分の混合物の中から選択されることを特徴とする、請求項1または2に記載の食材。
- 前記水生植物性成分または前記水生植物性成分のうちの少なくとも2つの成分の混合物が食材の5〜90重量%を占めていることを特徴とする、請求項1ないし3のいずれか1項に記載の食材。
- 前記少なくとも1つの別の植物性成分がゲル化植物性成分の中から選択されることを特徴とする、請求項1ないし4のいずれか1項に記載の食材。
- 前記少なくとも1つの別の植物性成分が寒天及び/またはアルギン酸塩及び/または他のゲル化植物性多糖類の中から選択されることを特徴とする、請求項1ないし5のいずれか1項に記載の食材。
- 前記少なくとも1つの他の成分が植物性脂肪、植物油、香辛料、植物性タンパク質及び植物性繊維の中から選択されることを特徴とする、請求項1ないし7のいずれか1項に記載の食材。
- 前記少なくとも1つの別の植物性成分が、脱臭ココナッツ脂肪、中性植物油、ペクチン、パプリカ、グルテン、成形豆腐、成形エンドウマメタンパク質、根菜繊維の中から選択されることを特徴とする、請求項1ないし7のいずれか1項に記載の食材。
- 前記少なくとも1つの別の植物性成分が、海生大型藻類の中から選択されることを特徴とする、請求項1ないし8のいずれか1項に記載の食材。
- 前記少なくとも1つの水生植物性成分が抽出物であり、前記抽出物が油及び/または脂質及び/または多糖類及び/またはタンパク質及び/またはクロチノイド色素で構成されていることを特徴とする、請求項1ないし9のいずれか1項に記載の食材。
- カット加工及び/または押出し調理及び/または3次元印刷によって得られることを特徴とする、請求項1ないし10のいずれか1項に記載の食材。
- 食肉入り食品の代用品としての、請求項1ないし11のいずれか1項に記載の食材の使用。
- 海産製品の代用品、または畜肉の代用品、または海産製品または畜肉に由来する製品の代用品としての、請求項12に記載の使用。
- 魚介及び海産物の中から選択された海産製品の代用品としての、請求項13に記載の使用。
- サケの代用品としての、請求項12ないし14のいずれか1項に記載の使用。
- 畜肉ステーキの代用品としての、請求項12または13に記載の使用。
- パテ、ムース、テリーヌタイプのスプレッド製品の形を呈する食肉入り食品の代用品を製造するための、請求項12または13に記載の使用。
- 食肉入り食品の代用品が、魚介のリエットの代用品及び畜肉のパテの代用品の中から選択されることを特徴とする、請求項17に記載の使用。
