Claims (15)
- 殻付き卵低温殺菌方法であって、
複数の長尺状マイクロ波キャビティを含む昇温段において、少なくとも主にマイクロ波照射により、複数の殻付き卵の卵黄温度を同時に低温殺菌温度にまで上昇させるステップと、
低温殺菌段において、前記上昇させた温度を低温殺菌に十分な時間維持するステップと
を備え、
前記マイクロ波キャビティは、それぞれに供給されるマイクロ波が他のマイクロ波キャビティに漏出しないように互いに隔離されており、
マイクロ波照射中に、前記殻付き卵を前記マイクロ波キャビティの長手方向に移動させる
ことを特徴とする殻付き卵低温殺菌方法。 - 前記マイクロ波キャビティは、その長手軸が互いに平行になるように並べて配置される
ことを特徴とする請求項1に記載の殻付き卵低温殺菌方法。 - 各マイクロ波キャビティ内に配置される前記殻付き卵の列数、当該マイクロ波キャビティのマイクロ波周波数およびマイクロ波波長のうち少なくとも2つは、表1から選択される
- 各マイクロ波キャビティの幅は、当該マイクロ波キャビティ内に配置される殻付き卵の列数に依存して表2から選択される
- 前記マイクロ波キャビティの長手方向に移動させる前記殻付き卵の長手軸は、前記卵の進行方向に直交する
ことを特徴とする請求項1から4までのいずれか1項に記載の殻付き卵低温殺菌方法。 - 前記マイクロ波キャビティの床および側壁の少なくとも一方を加熱して、前記殻付き卵の少なくとも外表面または殻表面を熱放射により加熱するステップを

ことを特徴とする請求項1から5までのいずれか1項に記載の殻付き卵低温殺菌方法。 - 前記殻付き卵の卵黄温度が、少なくとも主にマイクロ波照射により同時に低温殺菌温度まで上昇する間、前記昇温段の内部で熱風を移動させるステップを

ことを特徴とする請求項1から6までのいずれか1項に記載の殻付き卵低温殺菌方法。 - 前記殻付き卵を、少なくとも前記マイクロ波キャビティに滞留させている間に、その長手軸を中心に回転させるステップを

ことを特徴とする請求項1から7までのいずれか1項に記載の殻付き卵低温殺菌方法。 - 前記マイクロ波キャビティ内における前記殻付き卵の表面温度を測定して、前記卵の卵黄温度に相関させるステップを

ことを特徴とする請求項1から8までのいずれか1項に記載の殻付き卵低温殺菌方法。 - 殻付き卵低温殺菌装置であって、
複数の長尺状マイクロ波キャビティを含む、複数の殻付き卵の温度をマイクロ波照射により上昇させる昇温段と、
前記昇温段から受け取った前記殻付き卵の上昇後の温度を、低温殺菌に十分な時間維持する低温殺菌段と
を備え、
前記マイクロ波キャビティは、それぞれに供給されるマイクロ波が他のマイクロ波キャビティに漏出しないように互いに隔離されている
ことを特徴とする殻付き卵低温殺菌装置。 - 前記マイクロ波キャビティごとに、その内部をその長手方向に通過して前記殻付き卵を前記長手方向に移動させる搬送手段を
さらに備える
ことを特徴とする請求項10に記載の殻付き卵低温殺菌装置。 - 前記搬送手段は、前記マイクロ波キャビティにおいて、前記殻付き卵の長手軸が前記マイクロ波キャビティの長手方向に直交する状態で前記卵を支持する
ことを特徴とする請求項10または11に記載の殻付き卵低温殺菌装置。 - 前記マイクロ波キャビティを規定する、加熱された床および側壁の少なくとも一方を

ことを特徴とする請求項10から12までのいずれか1項に記載の殻付き卵低温殺菌装置。 - 前記低温殺菌段のために熱風を発生させる熱風発生器を
さらに備える
ことを特徴とする請求項10から13までのいずれか1項に記載の殻付き卵低温殺菌装置。 - マイクロ波発生器で発生した総マイクロ波電力を、マイクロ波電力部分に分割して、分割したマイクロ波電力部分を各マイクロ波キャビティに供給するマイクロ波分配器と、
各マイクロ波キャビティに供給されるマイクロ波電力を制御する制御部と
をさらに備え、
前記制御部は、
前記マイクロ波電力の制御を、前記昇温段に滞留する殻付き卵の卵黄温度が低温殺菌温度まで上昇するように行い、
各マイクロ波キャビティ内における選択されたまたは所定の位置にある前記殻付き卵の表面温度を、設定温度または基準温度として受信する
ことを特徴とする請求項10から14までのいずれか1項に記載の殻付き卵低温殺菌装置。
