Claims (2)
- 野菜を洗浄する工程と、
洗浄した野菜をブランチングして、野菜の表面温度を40℃〜90℃の範囲に設定する工程と、
ブランチングした野菜を、前記表面温度を冷凍開始温度として、該冷凍開始温度から、0.9℃/分以上の平均冷却速度で冷凍終了温度まで急速冷凍する工程と
を含むことを特徴とする冷凍野菜の製造方法。 - 前記急速冷凍する工程は送風を伴うことを特徴とする請求項1に記載の冷凍野菜の製造方法。
