Abstract
【解決手段】 本発明は、植物性乳酸菌増殖剤を開示し、該増殖剤がプロテアーゼ或いはプロテアーゼを含む物質を通じた植物性タンパク質分解反応後の酵素分解混合であり、プロテアーゼが植物プロテアーゼ、動物プロテアーゼ又は微生物プロテアーゼのうちの一種或いはそれらの混合物で、分解に用いられる植物性タンパク質が大豆タンパク、緑豆タンパク、ヒヨコマメタンパク、そら豆タンパク、えんどう豆タンパク、インゲン豆タンパク、小麦タンパクのうちの一種或いはそれらの混合物である。本発明は、該増殖剤を添加した発酵製品及びその調製方法を更に開示し、本発明に係る植物性乳酸菌増殖剤で製造した発酵製品を通じて植物性乳酸菌の生菌を1.0×109cfu/gに増殖させることができる。本発明の植物性乳酸菌増殖剤及びその発酵製品は、下記の利点を有する。(1)天然で食用可能な混合物に属するため、人体に対し副作用が起きず;(2)増殖剤を使用すると発酵時間が短くなるため、有害な雑菌による汚染を防止でき;(3)生菌数が他の増殖剤で生成される生菌数をはるかに上回り;(4)使用コストが低い。

植物性乳酸菌ST−IIIの代わりに、他の植物性乳酸菌の菌株を使用することもできる。

(実施例12:植物性乳酸菌のヨーグルトソフトクリーム)
(実施例13:植物性乳酸菌の生菌飲料)
材料準備:白砂糖10%、水45%、安定剤(ペクチン)0.5%とし、上記割合による安定剤と適量の白砂糖と水を撹拌して溶かし、高圧にして均質化した後殺菌して冷却する。発酵乳基材約40%を加え、均一に攪拌して酸度をpH4.4に調整して香りを調整する。20MPa下で無菌均質化して、植物性乳酸菌の生菌飲料を得る。4℃で1ヵ月間冷蔵すると、植物性乳酸菌の生菌数>1.0×108cfu/gとなる。現在市場上の植物性乳酸菌の生菌飲料は、比較的少なく、一般的に直接投入式菌粉末を使用するため、コストが高く、生菌数が少なく、2.0×107cfu/gのみであった。

Claims (18)
- 植物性乳酸菌増殖剤であって、前記植物性乳酸菌増殖剤はプロテアーゼ或いはプロテアーゼを含む物質を通じた植物性タンパク質分解反応後の酵素分解混合物であることを特徴とする植物性乳酸菌増殖剤。
- 前記プロテアーゼは、植物プロテアーゼ、動物プロテアーゼ又は微生物プロテアーゼのうちの一種或いはそれらの混合物であることを特徴とする請求項1に記載の植物性乳酸菌増殖剤。
- 前記プロテアーゼを含む物質は、植物プロテアーゼを含む物質、動物プロテアーゼを含む物質或いは微生物プロテアーゼを含む物質のうちの一種若しくはそれらの混合物であることを特徴とする請求項1に記載の植物性乳酸菌増殖剤。
- 分解に用いられる植物性タンパク質は、大豆タンパク、緑豆タンパク、ヒヨコマメタンパク、そら豆タンパク、えんどう豆タンパク、インゲン豆タンパク、小麦タンパク中の一種或いはそれらの混合物であることを特徴とする請求項1に記載の植物性乳酸菌増殖剤。
- 前記プロテアーゼ又はプロテアーゼを含む物質による植物性タンパク質分解反応は、重量比1:1〜50で混合することを特徴とする請求項1に記載の植物性乳酸菌増殖剤。
- 前記植物プロテアーゼは、果物のプロテアーゼ、野菜のプロテアーゼ、羅漢果のプロテアーゼ、長芋のプロテアーゼ或いはそれらの混合物であることを特徴とする請求項2に記載の植物性乳酸菌増殖剤。
- 前記動物プロテアーゼは、膵プロテアーゼ、胃プロテアーゼ、キモトリプシンのうちの一種或いはそれらの混合物であることを特徴とする請求項2に記載の植物性乳酸菌増殖剤。
- 前記微生物プロテアーゼは、リケニホルミス菌のプロテアーゼ、黒麹菌のプロテアーゼ、バチルス・アミロリケファシエンスのプロテアーゼ、枯草菌のプロテアーゼ、リゾムコル・ミエヘイのプロテアーゼ、米麹菌のプロテアーゼ、乳糖発酵性酵母のプロテアーゼ、ムコール・プシルスのプロテアーゼ、アスペルギルスメレウスのプロテアーゼ、クリフォネクトリア・パラシチカ(栗胴枯病菌)のプロテアーゼのうちの一種或いはそれらの混合物であることを特徴とする請求項2に記載の植物性乳酸菌増殖剤。
- 前記植物プロテアーゼを含む物質は、果物、野菜、薬用植物のうちの一種或いはそれらの混合物であることを特徴とする請求項3に記載の植物性乳酸菌増殖剤。
- 請求項1〜9のいずれか一項に記載の植物性乳酸菌増殖剤を添加した発酵製品であって、前記発酵製品内の植物性乳酸菌の生菌が1.0×109cfu/gに達することを特徴とする植物性乳酸菌増殖剤を添加した発酵製品。
- 用いる植物性乳酸菌増殖剤は、プロテアーゼ或いはプロテアーゼを含む物質を通じた植物性タンパク質分解反応後の酵素分解混合物であり、前記発酵製品内に植物性乳酸菌増殖剤を含有する重量パーセントが0.1〜20%とし、前記発酵製品が発酵乳又は生菌飲料水或いは生菌化粧品であることを特徴とする請求項10に記載の植物性乳酸菌増殖剤を添加した発酵製品。
- 前記発酵製品は、発酵乳の場合、その中に重量パーセントが0.1〜20%の植物性乳酸菌増殖剤を含有することを特徴とする請求項11に記載の植物性乳酸菌増殖剤を添加した発酵製品。
- 前記発酵製品は、発酵乳飲料の場合、その中に重量パーセントが0.1〜20%の植物性乳酸菌増殖剤を含有することを特徴とする請求項11に記載の植物性乳酸菌増殖剤を添加した発酵製品。
- 前記発酵製品は、生菌飲料水の場合、その中に重量パーセントが0.1〜20%の植物性乳酸菌増殖剤を含有することを特徴とする請求項11に記載の植物性乳酸菌増殖剤を添加した発酵製品。
- 該発酵製品は、生菌化粧品の場合、その中に重量パーセントが0.1〜20%の植物性乳酸菌増殖剤を含有することを特徴とする請求項11に記載の植物性乳酸菌増殖剤を添加した発酵製品。
- 請求項11に記載の植物性乳酸菌増殖剤の発酵製品製造方法であって、前記発酵乳の調製方法は、牛乳と植物性乳酸菌増殖剤を重量比100:0.1〜20によって混合する工程(1)と、滅菌する工程(2)と、植物性乳酸菌の終濃度が1.0×105−1.0×108cfu/gに達するまで接種する工程(3)と、凝乳するまで発酵させ、発酵時間が12hを超えない工程(4)と、を含むことを特徴とする植物性乳酸菌増殖剤の発酵製品製造方法。
- 請求項11に記載の植物性乳酸菌増殖剤の発酵製品製造方法であって、前記生菌飲料水の調製方法は、水と植物性乳酸菌増殖剤を重量比100:0.1〜20によって混合する工程(1)と、前記工程(1)の混合液を予熱して65℃まで昇温し、20MPa下で均質化を実現し、滅菌し、37℃まで冷却する工程(2)と、接種して16h発酵させて、植物性乳酸菌の終濃度を2.0×109cfu/gに達せさせる工程(3)と、工程(3)の生成物の中において200mg/100mlの割合でビタミンCを添加し、また純水で植物性乳酸菌の終濃度が2.0×108cfu/gになるまで希釈する工程(4)と、を含むことを特徴とする植物性乳酸菌増殖剤の発酵製品製造方法。
- 請求項11に記載の植物性乳酸菌増殖剤の発酵製品製造方法であって、前記生菌化粧品の調製方法は、化粧品と植物性乳酸菌増殖剤を重量比100:0.1〜20によって混合する工程(1)と、滅菌し、37℃まで冷却する工程(2)と、接種して発酵させる工程(3)と、を含むことを特徴とする植物性乳酸菌増殖剤の発酵製品製造方法。
